Linguine with Spinach and Brie

This was a good base recipe. I added mushrooms, sun dried tomatoes, crushed red pepper, italian seasoning and garlic salt (because of all the "no-flavor" comments). It turned out to be a really tasty dish that I'll definitely make again!

Gourmet Mushroom Risotto

We used a little onion instead of shallots, still fine. The mushrooms seemed like a lot at first, but the proportion ended up tasting great! I did have trouble making the timing work with the other things I was cooking, so I'm definitely going to plan it all thru next time I make this.

Eggplant Tomato Bake

I brushed the eggplant slices with olive oil and tossed salt and pepper on them as well. I didn't have enough parm so I added slices of provolone on top of some of the tomatoes, and those turned out really yummy. Dusted a little garlic salt over everything once out of the oven. Delicious! And wonderfully simple!

Baked Salmon II

this recipe was so nice and simple! perfect if you don't want to drown out the flavor of the salmon. after marinading in the fridge i couldn't find my glass baking dish OR aluminum foil, so i baked it in a metal baking dish and shortened the baking time. still turned out great. definitely keeping this one around!

Garlic Mashed Red Potatoes

This was a really simple recipe, but it wasn't very garlicky. I guess that's good for some people, but if you love garlic, try adding another clove or two.
