Extra Easy Hummus

Excellent recipe! We didn't have Tahini and this was a good alternative. We added paprika and definitely follow the recommendations of lemon. It brightened it up! I'll never use Tahini again.

Zucchini Bread II

I ran out of flour and used oat bran (blended to powder form first) and this came out fantastic! My 2yr. old assisted and dumped a ton of raisins in it, and it still came out delicious. I look forward to experimenting by adding cranberries and blueberries. Great base for a quick zuchchini fixin'.

Icebox Sugar Cookies

This was my first time ever making cookies of any sort. But what I found was a very simple and versatile cookie recipe. My 1 yr. old daughter loved them and I don't usually give her sweets of any kind. But she and I both fell in love with the light, almost airy taste of this cookie. It had a nice crunch to it, too. A really good combination. I added lemon extract to the last batch and that turned out wonderfully.

Ultimate Party Meatballs

Best Lemonade Ever

I had a birthday party for my 1 year old daughter, both kids and adults, alike, loved the lemonaide. I had to triple the ingredients for a large decanter and it was yummy, indeed. No leftovers except the lemons at the bottom.

Sweet and Gooey Chicken Wings

Buttermilk Pound Cake II

I am not best baker, but this simple, versatile, and quick recipe gave me all the confidence I need to bake again. No flops here, it's yummy and pretty from a bundt pan. Happy baking!

Potato and Egg Casserole

This was one of the most bland and boring dishes I've ever had. I thought all the butter would make it tasty, I even added a few spices like garlic powder (just because I love garlic), but this dish just left me feeling un-fed and unimpressed.

Spinach Brownies

Loved it! I made it in a hurry for some unexpected guests, all with an 11 month old at my ankles, too. This was super easy and wonderfully delicious. I added some garlic to the onions and sauted them, like others suggested. This one is a yummy one!

Blueberry Zucchini Bread

This was super easy to make and super yummy to eat. I used dried blueberries because that's what I had on hand. I soaked the dried blueberries for 20 minutes in hot water to plump them up and no one would ever know the difference once it's all baked in. I'll be making this one again, and again.

Lemon Garlic Tilapia

Quick and Easy Alfredo Sauce

This was a super easy alfrdo sauce, and it just tastes really good. I put a little nutmeg in it to give it a bit of a twist. The cream cheese just does something wonderful for the sauce. My hubby loves it. Pour over chicken and pasta with some hearty veggies and it'll be a knock-out!

No Fail Pie Crust III

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

I was pleasantly surprised to find this to be a hearty side dish, and tasty, too! I ventured on this because I needed to include green leafy vegetables and legumes for a nutritional diet during pregnancy. It was really yummy. I love chard now and I'm going to keep this in my repertoire of healthy meals. Thx!

Baked Flan

I had never made flan before, but a co-worker asked me to try my hand at it for a farewell party for a fellow co-worker leaving to work in Mexico. This was amazing! It was the talk of the meal. And it was so easy. We found it nice and light, just enough sweetness to it and yummy. This one's a keeper!
