Banana Wake-Up Bars

I used apple sauce instead of butter, whole wheat flour, accidentally used white sugar instead of brown, and I didn't have wheat germ. I added walnuts, some cinnamon, and craisins and baked as muffins. It is a bit cake-y, but still moist from the apple sauce. I will make these again (with brown sugar)!

Asparagus Guacamole

I didn't measure anything and I'm not sure if I made a mistake, but mine came out as more of a pico de gallo. I would still make it again because it sounds intriguing with company, but I'd try different flavors of salsa to add find the best complimentary one. I have only tried with a medium heat chunky salsa with cilantro

Popovers for Two

Good, but I have an old oven and opened the door before the last 15-20 minutes was up-my fault! I also added some bijol for a little color to go with my meal. Also excited to try it with cinnamon!

Muffin Frittatas

Very good, added tomatoes, more onions, and made it in a large pan, which took closer to an hour. It is a good baseline recipe, my boyfriend and I tried it with different salsas and hot sauces. Next time I'm going to add diced jalapenos for a kick! And different flavored cheeses

Halloween Eye of Newt

I didn't have food coloring, I used spicy brown mustard, and added siracha for the eyeball veins. It wasn't pretty or have as much bite as I wanted, but still a party favorite. I'll keep playing with more spices and make it again

Jicama Appetizer

I have never worked with jicama before and it showed. I wanted this as a go-to snack in the fridge and it didn't work well for me. I think it still could be a good recipe

Rosemary Red Potatoes

I didn't have onions, but this was great. I eye-balled all the measurements & time in the oven and it turned out great. I ate it with mushroom & havarti sandwiches. I plan to make it again

Hot Portobello Mushroom Sandwich

I enjoyed this sandwich, it was more filling then I expected and I enjoyed the textures. If you like olives or rye bread, this would be worth it to try

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Very delicious and basic. If you appreciate the flavors of spinach and garlic in addition to the texture of garbanzo beans, you will love this. Personally, it was a little bland for me and I added more cumin.

Orange Baked Chicken

I think I did something wrong, but mine did not turn out well. the chicken breast did not absorb the juice (mine was a bit watery) and the sliced oranges became yucky after being cooked in the oven.
