Blueberry Cream Muffins

Maybe I did something wrong? This did not come out great at all. I even provided the samples to a group of taste testers and the avg rating was 3. The actual muffin part was missing a lot of flavor. The only change to the recipe was that I added the coarse, large sugar crystals on top of the crown. Everything else was as written. Granted, the "overdone" issue was all on me. I probably needed to dial it down about 25 degrees in the oven due to the dark, nonstick pan. But that should affect flavor. Needs a boost in sugar, salt, and perhaps butter in place of oil. Anyone else want to chime in on this one? I like, but I don't get the 4.5 star avg so far. btong22222

Mildred's Sour Cream Pound Cake

Made as written with the following exceptions: 1) used only 4 tsps of vanilla instead of 2 Tablespoons. 2) added 2 tsps of almond extract for flavor 3) added 1/4 tsp of salt. I feared that the sugar would be too much, but it was not overly sweet. This recipe DOES make a lot of batter. I used a Nordicware Bundt which is rated for 10-15 cups of batter (the "anniversary" pan from Williams Sonoma), and the batter filled it approximately 2/3 - 3/4 full. With the rise, the cake rose above the pan top! So, yes, it's a big cake when done. Flavor was good, texture was decent. My only issue is with dryness. It was a tad on the dry side. Anyone have any tips on how to add moisture to this cake? Thanks! btong22222

Easy Key Lime Pie I

I'm not a connoisseur of key lime pies. But I needed to bring something to a family "pie off". 5 stars for simplicity, especially if you go with bottled lime juice. I squeezed by hand. Texture, nice and creamy. Flavor, good punch of lime and good amount of pucker. I also homemade the graham crust, but should have made a little bit more. Went straight for the mods by other users (4 yolks, 2 cans milk). Topped with whipped cream, but forgot to put little lime slice garnish. BTW, won the pie off. Thanks for the great recipe. Cocktail Meatballs

I will not attach any stars just yet. But these definitely were not a hit. I'm not Emeril, but I'm not a beginner either. The meatballs themselves came out fine. The sauce did not. I don't know if I did anything wrong. The jellied cranberry sauce was still kinda jellied, even after heating in a saucepan for a while. I doubled the recipe, yielding about 50. I ate about 15-20 myself, and came home with at least 10 leftover, and a party of about 10-12 people. What did I do wrong? I substituted nothing and read the recipe to a T. Thanks for any insights out there. Ben
