Creamed Eggs

My grandmother used to make this for us, and, as a kid I would request it! I made this for my husband and son this morning and they both LOVED IT! Simple and the best thing is when you can make it with eggs from your own chickens, milk from your own cow, and butter from the cream from the milk from your own cow. Over toast, with some salt and pepper - DELICIOUS!

Asian Orange Chicken

This was terrific! I used a bit more orange juice than called for, but left everything else in the ingredient lineup the same. Used brown rice and followed instructions of another review and reserved the fried chicken aside. I sauteed onion, pepper, celery, carrot and turnip greens separately and reserved. I put rice on the place, sauteed veggies on rice, then chicken. Top with generous portion of sauce. Delicious!

Sausage Gravy

Easy to make, I used a pound of our "home-grown" sausage we put up last month (because it was not too fatty I had to add a tablespoon of vegetable shortening to the roux) - I heated my milk in the microwave so that it was hot when I poured it into the roux. I added very little salt and about a 1/4 tsp of freshly ground pepper. It was very good. I imagine it would be even better if left to sit overnight for the flavors to blend.

Peanut Butter Oatmeal Cookies II

this is a great basic recipe (i doubled it, and turned out fine) saw another name for these; "cowpies" - I thought that was cute. wouldn't change a thing! trick is, when it starts to boil hard, THEN time one minute - otherwise if you don't do it long enough, it's gooey runny and if you boil too long, it's hard and crumbly... good luck and thanks for the recipe!

Soy Milk Pancakes

While I made a few variations, only due to what I had on hand, so far, these are the best vegan pancakes I've made/had!!(i doubled the recipe) The variations I used were to use almond milk/vanilla rice milk instead of soy. I used 1/2 unbleached all purpose flour and half whole wheat flour. I used an egg replacer. I added ground flaxseed - a couple tablespoons and about a tablespoon of shredded granny smith apple - and, finally a pinch of nutmeg. The result was fantastic, a nutty and wholesome treat topped off with organic maple syrup. Super tasty and filling.

Crispy Fried Fish

great recipe even for a fish frying "newbie" like me...things were going great (thanks to a thermometer in the oil, helping me keep a proper temp) until my son (3 years old) decided to take a closer look and dumped over the entire bowl of batter (where the fish was bathing in the batter) onto the waiting floor. What I DID fry, was very very good. Oh, and pay close heed to the review which specifies to use the corn flakes in succession, otherwise, you end up with a bowl of mushy cornflake crumbs that won't stick to the fish! p.s. I added just a bit (maybe a half cup) of yellow cornmeal to the batter.

Mushroom Sauce Baked Pork Chops

This was really good. I too added minced garlic to the onions for sauteing. I went to grab a can of cream of mushroom soup and I was out! So, I used cream of chicken and added some sour cream. Hubby and toddler liked it too. The only other thing I did was microwave the potatoes so they would cook a little faster!! Bravo! Great recipe!

Orange Loaf

WOW! what a phenominal cake (LOAF) !! I doubled the recipe as I am doing some holiday baking and boy-oh-boy will I be proud to give this away! I made two loaves and a couple mini-bundt cakes. The glaze did not turn out as thick as I expected so maybe I did not get it hot enough or cook it long enough, so maybe someone could elaborate on that for me. WILL definitely make this again, hubby is going to LOVE it!

Onion Pan-Fried Pork Chops

Very good! Simple, easy, AND I made a gravy with the drippings by adding a bit of flour and 1/2 -n- 1/2 or, whole milk. Hubby and Father In Law liked it! Will make again, thanks for the recipe!

Chicken Alfredo

Good base! I used whipping cream and added 4-5 cloves of minced garlic and fresh basil at the end. VERY good, and as well as broccoli and zucchini, I added some yellow squash too! YUM! Even my two year old is grabbin up the noodles covered in the sauce!!

Aunt Mary's Vanilla Frosting

This frosting is easy to make, but I would use 1 full cup of confectioners sugar as it isn't very sweet as is. Like the other reviewers mentioned, it was a little greasy! But! My husband does NOT like a sweet icing, so this was great for him. I added zest of a lemon to brighten it up, and maybe add some texture plus flavor. I will make it again, but tweak it.

Apple Oatmeal Crisp

Incredibly delicious, and good with any kind of apples! The oats give it an 'oatmeal cookie' texture. A great dessert! I will use less sugar (brown and white) next time though!
