Butter Fried Parsnips

This recipe brings me back to my childhood. My Dad would cover a mound of parsnips with straw and soil to store them over the winter. In late winter or early spring he would break into the cache and prepare them this way, well maybe a little more butter. The nuttiness of this root vegetable is delicious!

Tater Tot Taco Casserole

Thank you for a useful recipe. There are times I need a casserole type dish, church, school and this works very well. I made it this afternoon with the addition of green/red/jalapeno peppers and roma tomatoes all diced. Very Good! Thank you again

Way, way, way too much salt for anyone at any age! Use 1/4 cup salt and add 3Tbs sugar, and 3 Tbs paprika

Beef Barley Stew

I was disappointed with the end result. I was expecting a more robust, heartier stew. I ended up adding some tomato paste, brown sugar, a concentrated beef broth (nearly a demi-glaze) along with various herbs and spices.

Cranberry Chutney II

I serve this as a sauce with a smoked pork butt and it is a perfect compliment. I like to use a tablespoon of powdered mustard with this chutney to round it out, but it is perfect without it.

Malaysian Beef Rendang

This dish had and excellent flavor profile even with the heavy amount of spices. I was concerned about the 15 peppers so I reduced it to 7 and removed the seeds from the pods. The heat level was below what I expected, the next time I will use the suggested amount. I would like a little more contrasting texture, I may use peanuts, pecans or cashews next time. Also I would like a little more color, red peppers with their low acidity and broccoli added late in the cooking should brighten the dish without affecting the overall flavor curve.

The Best Bean and Ham Soup

There is absolutely no substitute for a ham bone or ham shank with meat on it for a ham and bean soup. The flavor of the bone imparts to the dish is what makes a true Ham and Bean Soup.

Blue Cheese Ball

To each his own, but I will not make this again. It seemed bland and without flavor. After an initial tasting and the addition of cumin, paprika and basil the dish was a little more flavorful.
