These are soooo good, my finace gets all giddy whenever I make these! When I'm trying to get something other than beer & red meat into him, I also add some tuna in there - it might sound wierd, but it tastes great! I also found that brushing the potatoes with a little olive oil and then sprinkling a bit of salt, pepper or other seasoning on them (rosemary works well) before baking makes for a really crisp, savory skin that is a little easier to scoop out.
