Delicious Egg Salad for Sandwiches

Delicious and easy!! I upped the paprika a little bit for a little more zing and used celery instead of green onion just because that's what I had.

Chewy Peanut Butter Chocolate Chip Cookies

These cookies are great, i love how soft they are! But, I don't think i would know they were peanut butter cookies if someone else had made them, I just don't taste it. Otherwise, a great chocolate chip cookie!

Vickie's Beer Bread

This bread was good, basic. It was a little greasy when I first took it out of the oven, probably because of the butter, but after it cooled a bit I liked it a lot better. I wasn't paying attention and put butter on top instead of margarine the first time I made it. Then the second time I used margarine like the recipe calls for and actually preferred it the other way. Made two loaves and 45 minutes was just perfect. Will deffinately make it again, very easy!

Beef Enchiladas II

This was the first time I'd ever made enchiladas, and they came out great!!! I barely touched the mexican rice I made it with because I couldnt keep my fork out of them. My boyfriend drizzled hot sauce over the top and loved it. These really hit the spot, I just couldnt get enough. Only slightly negative parts were that I couldn't fit 10 (10 inch) tortillas in my 9x13 pan, but didn't have enough meat to fill more anyway (one other downside...). I also added taco seasoning mix to the meat as many recommended and canned enchilada sauce instead of the dry mix. Also, barely used half an onion in the meat and it was plenty. Overall a very tasty meal, I will deffinately make them again with a few adjustments, maybe smaller tortillas. They even warmed up pretty well the next day!

Seven Layer Taco Dip

LOVED IT! This was the first time I've made 7 layer dip, and was better than any other i've had. I made just a few changes that were recommended in other reviews: added a layer of guacamole over the beans and mixed the taco seasoning in sour cream/cream cheese mix instead of beans. Wonderful! I can't wait to make it again. Also, I made it in a 9x13 pan and had to use a second can of beans.

Easy Chili I

I've never made chili before, and searched tons of recipes. Found this one, and SO GLAD I DID. I did end up adding more chili powder, but that was the only change. I loved that is was spicy, but not unbearable. Delicious, can't wait to make it again!
