Peachy Pork Chops

Reviewed: Sep. 11, 2011
Great base recipe! Like other reviewers suggested, I added a few things: 2 tbsp soy sauce, 3 cloves minced garlic, , and 1 tsp cinnamon. Also, after the 15 minutes of cooking down, I removed the pork and added a water/corn starch mixture -- mixed before adding to pan (1/4c water to 2 tbsp corn starch). Absolutely yum!!!

Christmas Morning Frittata

Reviewed: Aug. 27, 2011
Great base recipe! READ OTHER REVIEWERs notes for great tips. Used 6 eggs (instead of 5), added 1/2 tsp dried Thyme, used only 1 cup of cheese (1/2c mozzerella,1/2c cheddar), added 1/4c kale & 1/2c mushrooms (sauteed w/other veggies), and added 3/4c diced turkey ham. YUM! Dad loved it too!

Slow Cooker Lentil and Ham Soup

Reviewed: Aug. 24, 2011
Definitely a recipe that you can adapt to what you have on hand. I didnt have celery so just used a tsp of celery seed for flavoring. Used red onion instead of white/yellow. Used turkey ham instead of regular ham. ADDED 1 1/2 tsp of cumin and 1/2 tsp of salt as it was a bit bland for our tastes. We like lots of spices in our food. :-)

Baked Kale Chips

Reviewed: Aug. 21, 2011
Yep, a really simple recipe for a great use of Kale! As recommended by another reviewer, used Pam's Olive Oil spray instead of trying to pour on the oil. Seasoned with salt, pepper, and garlic powder. YUMMY!!!

Wow, great recipe! This was so good that I used the extra that I'd had left over for salad dressing. Yum!!!

Chicken Cordon Bleu Casserole

Reviewed: Jul. 31, 2011
This is a pretty decent base recipe. I took suggestions of many -- added cooked rice in pan bottom; thyme, garlic powder, parmesean cheese in chicken coating; added 2 tbsp mayo to egg wash to thicken; plus I used turkey ham instead of regular ham. It still could use a little extra flavor but havent decided what the addition will be. Thanks!

Spanish Flan

Reviewed: Jun. 19, 2011
This was a difficult recipe since I'd never made flan before. I think I cooked the sugar too long & it made an awful mess PLUS you MUST immediately clean that pan or the sugar will harden & be hard to get out of the pan. Also, it said to cook for 60 mins, which I did. When I went to remove the pan from the oven (in a water bath as suggeste by other reviewers), the flan was totally liquid still so I thought maybe I did something wrong & cooked it longer without the water bath. Then the melted sugar came up thru the center of the flan. Could someone tell me if it is supposed to be liquidy after 60 mins? Would love the input. Thx!

Easy Roasted Peppers

Reviewed: Jun. 19, 2011
Very helpful recipe for those newbies (like me) who'd never done roasted peppers before. I used mini bell peppers, which I wouldn't recommend because after roasting, a lot of the 'meat' is gone. BUT it was still really yummy. I roasted them & then used the Mediteranian Marinade also on Allrecipes (http://allrecipes.com/recipe/mediterranean-marinated-roasted-peppers/detail.aspx) Absolutely delicious!

Mediterranean Marinated Roasted Peppers

Reviewed: Jun. 19, 2011
Very nice indeed! I used mini bell peppers and broiled them skin side up until skin begins to blacken/blister (just like other recipes call for). Then I peeled the skin off and added this marinade. YUM! I did not have any feta cheese but it was still delicious!!!

WWII Oatmeal Molasses Cookies

Reviewed: Mar. 13, 2011
Great recipe w/lots of flexibility! In the interest of making this a bit more healthy, I did the following: 1) Whole wheat flour instead of white, 2) Replaced white sugar with 1/2 parts Stevia & brown sugar, 3) Added extra vanilla (recommended by others), 4) Replaced shortening with 1/2 parts olive oil & applesauce, 5) Replaced raisins with dark choc chips, 6) Added 1/2 tbsp cinnamon VERY YUMMY!!!

Gorgonzola Cheese Sauce

Reviewed: Dec. 18, 2010
Nice recipe to play with. I added about 1 1/2 tbsp minced garlic which I sauteed in the butter before adding the flour. I increased flour to about 4 tbsp, cut milk to about 2 cups of fat-free milk, and increased the gorgonzola to about 3/4 cup. I also added in 1/2 cup of parmesean and 2 tbsp dried parsley, which was a nice touch, and tossed the sauce with mini bowtie pasta. It was pretty good but would probably use a full cup of the gorgonzola next time. Thanks!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Dec. 18, 2010
Fantastic! Like other reviewers, I tweaked this just a bit for my own taste. Added a pinch of dried rosemary and thyme, added a package of sliced mushrooms, and cut the garlic in half. WOW! Everyone raved about this and it was SO easy!

The Hudsucker Pasta

Reviewed: Dec. 5, 2010
Great recipe. Definitely full of flavor! Like another reviewer, I used the entire jar of Newman's sauce (and couldn't find Bombolina sauce so used another kinds of Newmans instead). I bought a bag of frozen all ready cooked, deveined, and shelled shrimp, which greatly reduced prep time. The pine nuts were a nice addition but could be left out (if you don't have any) and it wouldn't affect the overall flavor much. I also used whole wheat penne pasta and it was still yummy. Thanks!

Butternut Squash Soup

Reviewed: Nov. 21, 2010
Yummy! Made a few alterations based on other reviewers' suggestions. Oven roasted squash first, cut in half, olive oil, garlic powder @ 350 for 50 mins. Increased chopped onion to 9 tbsp & added 3 cloves minced garlic. Used olive oil instead of margarine (healthier). My whole squash was more like 5 cups but it still worked. Used 3 cups organic vegetable broth, no chicken bullion & only 1 8oz pkg of cream cheese. WOW! So yummy!

The Best Vegetarian Chili in the World

Reviewed: Nov. 21, 2010
Loved it! Made a few modifications based on other reviewers' suggestions. Instead of 2 green bell peppers, used 1 green, 1 red. Only used about 1/2 of a jalapeno (my 82 yr old Gram was eating w/us & didnt want to shock her) & its a good thing b/c it was still VERY spicy. Also, used a whole medium onion, only 1 pkg veggie crumbles, only 2 cans crushed tomatoes & added 1 can diced tomatoes & 1 small can tomato sauce, and replaced garbanzos with can of white beans. This recipe makes a HUGE amount of food! Definitely more than 8 servings. Served with cornbread.

Szechwan Shrimp

Reviewed: Aug. 1, 2010
Great recipe & easy to alter too. I tripled the sauce like other reviewers suggested, doubled the onions & garlic and used a whole pound of medium-sized shrimp. Also, I did NOT increase the chili flakes and it was still nice and spicy (just not HOT). Added red bell pepper, baby carrots & broccoli florets and served it all over rice. Yummy!

Pasta Pomodoro

Reviewed: Jul. 18, 2010
Excellent recipe, easy to follow & easy to customize! I am vegetarian so I used vegetable broth instead of the chicken broth, increased the tomatoes to 2 1/3 cup and added a tsp of white sugar. MMM! WOW! It was so good that I made a 2nd batch of it right after we finished eating the first batch (same day LOL).

Tasty Spaghetti Sauce

Reviewed: Mar. 21, 2010
This is a great recipe! I am vegetarian so just skipped the meat-cooking portion of the recipe. Instead, I cooked the onions & garlic in olive oil until the onions began to get soft, added the tomato paste & stirred for a few minutes. Then added about 1/3 cup of white wine to clean the bottom of the pan. After that, went back to recipe directions, added the rest of the ingredients PLUS I added mushrooms & black olives. Simmered for at least an hour, which made the house smell great! MMM!

Baked Potato Skins

Reviewed: Feb. 14, 2010
These are great! Of course I made a few healthful revisions for my vegetarian diet. :-) I used MorningStar's veggie "Bacon", olive oil instead of vegetable oil, and only about 3/4 cup of low-fat cheese (just put less in each skin), and fat-free sour cream. They were a super hit! Thanks!
