Baked Dijon Salmon

Outstanding recipe! Used this with Tilapia instead of Salmon and it was wonderful. Got rave reviews from two very discerning fish eaters. Cooked for 13 minutes. Perfectly done and flaky. CHANGES: Substituted olive oil for butter; used 1 tsbp of dried parsley as I didn't have fresh. Thank you!

Spiced Yogurt Pound Cake

I read some other reviewers comments & made some changes. 1) Replaced sugar with Truvia 2) Replaced the butter with 1/4 cup olive oil & 3/4 cup applesauce. 3) Doubled the cinnamon, nutmeg, and cloves 4) Did not use salt or allspice. 5) Used VANILLA greek yogurt 6) I added 1/2 tsp baking powder as someone else suggested to make it less dense. Tastes great & is sugar and butter-free!

Deviled Eggs II

These were a little dry. I added another tsp of white vinegar, used dijon mustard and increased amount to 1 tsp, added 2 tsp of sweet relish, and 1 tbsp of real bacon bits. A good base recipe to make your own. Thanks!

Walnut Brownies

A great base recipe for sure. Very modifiable to your needs. As many reviewers did, I doubled the batch which made a nice 9x9" pan of brownies. I replaced 2c white sugar with 3/4c stevia in the raw & 3 tbsp brown sugar; instead of 4 egg whites I used 2 whole eggs & 2 egg whites; instead of 1/2c butter I used 1/4c butter & heaping 1/4c applesauce; used cocoa powder instead of carob powder; and used 1/2c pecans (all I had) instead of 2c walnuts. Turned out a nice, dense chewy brownie. Yum!

Sugar-Free Peanut Butter Cookies

For a sugarless cookie, these aren't bad! I used Stevia (granular kind) instead of Sucralose and only made 1/2 batch. I used only 1/2 cof Stevia, and followed other reviewers' recommendation by adding 1 tsp vanilla, a 1/2c of quick oats, and 2 tsp of cocoa.

These were tasty and soft but not dense enough for me. Plus, I took other reviewers suggestions & added some salt and 2 tbsp of vanilla instead of 2 tsp. Needs something more, but havent figured it out yet. THanks!

Peachy Pork Chops

Great base recipe! Like other reviewers suggested, I added a few things: 2 tbsp soy sauce, 3 cloves minced garlic, , and 1 tsp cinnamon. Also, after the 15 minutes of cooking down, I removed the pork and added a water/corn starch mixture -- mixed before adding to pan (1/4c water to 2 tbsp corn starch). Absolutely yum!!!

Christmas Morning Frittata

Great base recipe! READ OTHER REVIEWERs notes for great tips. Used 6 eggs (instead of 5), added 1/2 tsp dried Thyme, used only 1 cup of cheese (1/2c mozzerella,1/2c cheddar), added 1/4c kale & 1/2c mushrooms (sauteed w/other veggies), and added 3/4c diced turkey ham. YUM! Dad loved it too!

Slow Cooker Lentil and Ham Soup

Definitely a recipe that you can adapt to what you have on hand. I didnt have celery so just used a tsp of celery seed for flavoring. Used red onion instead of white/yellow. Used turkey ham instead of regular ham. ADDED 1 1/2 tsp of cumin and 1/2 tsp of salt as it was a bit bland for our tastes. We like lots of spices in our food. :-)

Baked Kale Chips

Yep, a really simple recipe for a great use of Kale! As recommended by another reviewer, used Pam's Olive Oil spray instead of trying to pour on the oil. Seasoned with salt, pepper, and garlic powder. YUMMY!!!

Chicken Cordon Bleu Casserole

This is a pretty decent base recipe. I took suggestions of many -- added cooked rice in pan bottom; thyme, garlic powder, parmesean cheese in chicken coating; added 2 tbsp mayo to egg wash to thicken; plus I used turkey ham instead of regular ham. It still could use a little extra flavor but havent decided what the addition will be. Thanks!

Spanish Flan

This was a difficult recipe since I'd never made flan before. I think I cooked the sugar too long & it made an awful mess PLUS you MUST immediately clean that pan or the sugar will harden & be hard to get out of the pan. Also, it said to cook for 60 mins, which I did. When I went to remove the pan from the oven (in a water bath as suggeste by other reviewers), the flan was totally liquid still so I thought maybe I did something wrong & cooked it longer without the water bath. Then the melted sugar came up thru the center of the flan. Could someone tell me if it is supposed to be liquidy after 60 mins? Would love the input. Thx!

Easy Roasted Peppers

Very helpful recipe for those newbies (like me) who'd never done roasted peppers before. I used mini bell peppers, which I wouldn't recommend because after roasting, a lot of the 'meat' is gone. BUT it was still really yummy. I roasted them & then used the Mediteranian Marinade also on Allrecipes (http://allrecipes.com/recipe/mediterranean-marinated-roasted-peppers/detail.aspx) Absolutely delicious!

Mediterranean Marinated Roasted Peppers

Very nice indeed! I used mini bell peppers and broiled them skin side up until skin begins to blacken/blister (just like other recipes call for). Then I peeled the skin off and added this marinade. YUM! I did not have any feta cheese but it was still delicious!!!

WWII Oatmeal Molasses Cookies

Great recipe w/lots of flexibility! In the interest of making this a bit more healthy, I did the following: 1) Whole wheat flour instead of white, 2) Replaced white sugar with 1/2 parts Stevia & brown sugar, 3) Added extra vanilla (recommended by others), 4) Replaced shortening with 1/2 parts olive oil & applesauce, 5) Replaced raisins with dark choc chips, 6) Added 1/2 tbsp cinnamon VERY YUMMY!!!

Gorgonzola Cheese Sauce

Nice recipe to play with. I added about 1 1/2 tbsp minced garlic which I sauteed in the butter before adding the flour. I increased flour to about 4 tbsp, cut milk to about 2 cups of fat-free milk, and increased the gorgonzola to about 3/4 cup. I also added in 1/2 cup of parmesean and 2 tbsp dried parsley, which was a nice touch, and tossed the sauce with mini bowtie pasta. It was pretty good but would probably use a full cup of the gorgonzola next time. Thanks!

Amazing Pork Tenderloin in the Slow Cooker

Fantastic! Like other reviewers, I tweaked this just a bit for my own taste. Added a pinch of dried rosemary and thyme, added a package of sliced mushrooms, and cut the garlic in half. WOW! Everyone raved about this and it was SO easy!

The Hudsucker Pasta

Great recipe. Definitely full of flavor! Like another reviewer, I used the entire jar of Newman's sauce (and couldn't find Bombolina sauce so used another kinds of Newmans instead). I bought a bag of frozen all ready cooked, deveined, and shelled shrimp, which greatly reduced prep time. The pine nuts were a nice addition but could be left out (if you don't have any) and it wouldn't affect the overall flavor much. I also used whole wheat penne pasta and it was still yummy. Thanks!
