Paleo Banana Bread
After reading the reviews, I decided to try this recipe as muffins instead of a loaf and they turned out wonderfully! Here are the revisions I made: ~ Added 1/2 tsp of ground nutmeg ~ Increased the cinnamon to 1 1/2 tbsp ~ Used vanilla soy milk instead of water ~ Used vanilla extract instead of almond (didn't have any almond extract on hand) ~ Used a combo of agave and real maple syrup (1/8c each) ~ Added 3/4 cup of extra dark 65% cacao chocolate chips The muffins were super moist but firm and I WILL be making these again! Oh, and I used a muffin pan with light spray of oil instead of paper cups because paper cups tend to stick way too much. Thank you!

Slow Cooker Baked Beans
Not a bad recipe to play with. I followed other reviewers suggestions and had to increase the amount of liquid as 1 cup was not enough. I think I wound up adding another 1 or 1 1/2 cups of water before the cooking was complete. I did not have enough maple syrup on hand, so I used 1/4c maple, 1/3c honey, and almost 1/2c of homemade BBQ sauce that I had on hand. I also added about 1/3c molasses based on another reviewer's post. Lastly, we like our beans vegetarian so did not add any meat (ham hocks, etc). These turned out pretty good! Thank you!

Dijon-Tarragon Cream Chicken
My family raved about the gourmet dinner I provided tonight with this recipe! Based on other reviewers recommendations, I coated the chicken in a dijon/white wine mix and then dredged in seasoned flour. I deglazed the pan with white wine and put in 1/4 chopped onion with it. I also tripled the sauce and used half & half instead of heavy cream. Terrific! Will make again! p.s. I did not have any fresh taragon so I used 1 tsp of dried.
