Goat Cheese Salmon

I liked this a lot and for my first time cooking salmon, it was fool-proof! However, it did take 25 minutes to back so make sure you carefully check the fish. Also, it was a bit rich for me. My guy did not agree and thought it was perfect but it was almost difficult for me to eat too much due to the richness. Going to play around with this but it's a keeper for sure! I served with broiled cauliflower and it was a yummy dinner.

Carrot and Cilantro Soup

Pretty good but it seemed like it was missing something. My boyfriend added some nutmeg to his bowl but I personally didn't care for that. Not sure if I would make it again.

Chocolate Chocolate Chip Cookies II

I used only a cup and half of butter and these still turned out great! Definitely not healthy cookies at all but next time I will half the flour with wheat flour as well as keep the reduced butter. They were very good, moist cookies and my boyfriend is enjoying them immensely!

Simple Garlic and Basil Pesto

This is delicious!! Very easy and super yummy! Just used pine nuts and added extra garlic as we are garlic lovers. Made in the food processor this was a great sauce to use for pasta, sandwiches, or even as a pizza topping.

Apple Cole Slaw

As far as coleslaw goes, this was good and pretty healthy too. I used low fat mayo and it tasted great! This was a crowd pleaser overall and I would make again to take to an outdoor party!

Creamy Dill Dip II

I used fat free cream cheese and low fat sour cream and this was soooo good! It was a big hit at a party and no one would ever guess I cut corners on the fat content. I served it with carrots, crackers and even a fresh baked baguette. It went well with everything!!!

Vegetarian Baked Pasta

I thought this was a pretty decent meatless dish. However I also thought there were not enough veggies. I added a green pepper, half a white onion, some frozen spinach (thawed and drained) and used garden veggie tomato sauce. It came out very well and I believe it's a pretty healthy dish. The mushrooms provided a meaty texture and went well with the other veggies I added. Good recipe but I'd suggest variations with other veggies for true veggie lovers!

Orange Beef-Style Tofu Stir-Fry

I really wanted to like this recipe. I even added a red pepper, green pepper, and onion in addition to the carrots. However nothing can mask the fact that this sauce is just not good! I even tried to add honey and more soy sauce but it really is not good. This is nothing like orange flavored chinese or thai dishes. The hot and spicy tofu recipe is much better.

Red Enchilada Sauce

I used rotel instead of salsa but this sauce was still amazing. I used it in conjunction to the addictive sweet potato burritos and made sweet potato enchiladas, yummy!

Addictive Sweet Potato Burritos

I made this recipe into enchiladas by using the red enchilada sauce recipe on this site. I also added green and red peppers and used refriend beans. I seasoned the sweet potatos (after I boiled them) with cayenne pepper, paprika and a bit of honey . They needed about 16 mintues in the oven but they turned out wonderful. Topped with cilantro this made a very healthy and very hearty meal. I definately recommend it with the sauce. It gives it a very nice taste and texture. I'm considering adding my own recipe to this site after I refine it a bit!

Artichoke & Spinach Dip Restaurant Style

I made this for the super bowl and it was a hit. Personally I found it a little salty. I would like to try it with a better alfredo sause ( I think i used rago). But overall, easy and a crowd pleaser

Three Cheese Baked Pasta

We really enjoyed this dish. Usually I try to eat meals with more veggies. I did add a red pepper to the meat and used lean beef, lowfat sour cream and enriched pasta. Still not the most healthy pasta dish but everyone will love this! I agree with others that this makes a lot of pasta so you should use a deep dish. We had lots of wonderful leftovers. I'm considering adding spinach next time and perhaps reducing the amount of pasta or beef. Overall, great recipe!

Roasted Red Pepper Lasagna

I make this recipe pretty often. It is a hearty vegetarian dish and you won't miss the meat at all! I follow the directions except adding a few more cloves of garlic as we love garlic. I use whole wheat noodles and organic red peppers and I think this is a great healthy entree. A spinach salad or steamed green beans goes really well.

Hot and Spicy Tofu

This was the first time that I tried cooking tofu. I made sure to drain the tofu for and hour and half and i think that really helped the tofu. We added an extra clove of garlic, a touch of honey (in the sauce) and canned green chilis. It was wonderful. I usually don't like things that are too spicy but we added the entire amount of red pepper and it was perfect. My mouth was tingling but nothing too bad. A great easy tofu recipe.
