Peanut Butter Cream Parfaits

Fast...simple...easy...yummy! I actually spread it over a graham cracker pie crust and topped it with coarsly chopped chocolate. Froze for about an hour and devoured!

Fudge

YUM-O! 1 cup milk chocolate and 2 cups semi-sweet chocolate, didn't change anything else. Delicious! Loved the tip of greasing the pan, then putting the foil in and greasing again. It helped keep the foil in place and not sliding everywhere.

Greek Penne and Chicken

As per other reviews, I added 6 oz tomato paste, marinated artichokes, canned diced tomato, and doubled the feta. I threw in some black olives and halved the pasta. Sauce base: minced garlic, diced onion, equal parts olive oil and marinated artichoke juice. Husband loved it. I'm not terribly crazy about the marinated artichokes, but it was still really good. Sauce was perfect consistency, but next time I think I'll just go with the butter. Oh yeah, I used fat free feta...not so sure that was a good choice. It was a bit rubbery. Next time, I'll just use regular feta.

Best Brownies

Very yummy! My changes were: I only baked the brownies for 20 minutes (which left them slightly fudgy), I added 2 Tbsp of milk to the frosting and cooked all of the frosting ingreadients in a sauce pan (melting the butter first then adding the rest of the ingredients) until the lumps in the powdered sugar were mostly gone. This made more of a glaze and was perfect to top my brownies. It has to sit up a bit or the frosting will run right off the brownines. NEXT TIME: I will definitely double the brownie mix, to make thicker brownies. Hubby is a chocoholic, so more is better, LOL!

My Kid's Favorite Pork Chops

Honestly I followed most of the changes that DesiLuGirl posted in her review. I had a hard time keeping the cooking temperature low enough on my Korean gas stove...oh how I miss my electric stovetop back home in the U.S. I think next time I may try them in a slow cooker or the oven. Delicious though. Good stuff!

Cowboy Mashed Potatoes

Unexpectedly good! I didn't have any jalapenos so I just dumped a can of Rotel into the boiling potatoes. I chopped my carrot. I also used a can of Niblet corn and added it into the water for the last 5 minutes. I love cheese, so I doubled the cheese. It was a hit!

Meatball Grinders with a Yummy Sauce

I only added 2 Tbsp of apple jelly, since I'm not a fan of sweet entrees. Husband really liked it and said to keep it in the recipe box. I loved the pizza sauce!

Easy, Cheesy Zucchini Bake

I only used 2 cups of marinara and smaller zucchinis. I also added chopped jalapenos, black olives and feta cheese. When I browned the turkey burger, I added garlic salt, pepper and italian seasoning. Cooked for 25 minutes under foil, then 10 minutes uncovered. I had no problem with the zucchini being tender or the dish being too watery. I think next time I would just quarter up the zucchini in bite sizes. It didn't seem to absorb any of the flavor. Tasty but needs tweaking.
