Awesome Turkey Giblet Stock

I've been a vegetarian for 21 years!!! Faced with a neck and bag of giblets I was mortified! If I can do this anyone can. Gonna attempt a turkey stew now...wish me luck carnivores! P.S. No I won't be eating it.

Easy Vegan Whole Grain Pancakes

The answer to the question: "What happens when you just announced 'pancakes' to your kids - and then you find NO EGGS!"? I used this as a springboard. 1 Cup whole wheat flour 1/8 Cup cornmeal nutmeg instead of cinnamon apple juice in stead of water 2 tsp Baking Powder for extra fluff! I threw some frozen strawberries into a pan with a splash of pure maple syrup for topping. Kids had them with just the syrup and loved them.

Red Lentil Curry

I used canned lentils - just add them with the tomato puree and add 1/2 cup of water. Very filling. Goes nice with basmalti rice and naan bread.

Whipped Cream Cream Cheese Frosting

Great tips about the heating and cooling of the mixing bowl. Mine was very smooth. I would only add half the cream next time though - personal preference though. Note - this makes enough for 12 HUGE cupcakes!

Unbelievable Fish Batter

Reduced the baking powder too! Wonderful! As a brit in north america I'm always looking for a good fish n chip batter - this was the best we've had! We deep fried thin fillets of sole. looking forward to experimenting with other foods.

Avocado Scrambled Eggs

Thanks for the starting point. I added chopped tomatoes; onion and sprinkled with goats' cheese instead of bacon. Goats' cheese is my favorite combo with avocado. The salt and pepper are important to add flavor.

Tzatziki II

Followed advice about cucumbers and it worked like a charm. Some water did come to the surface when stored in fridge - but just carefully poured it off (just like I do with natural yogurt!). Exactly what I was looking for. Fresh mint from my garden - yummy.

Curried Hummus

I'm sorry to say I added a couple of tablespoons of tostitos nacho cheese dip - but just to appease the kids. Otherwise the curry was a nice touch when you don't have tahini in the house. I also made the water and curry changes suggested elsewhere in these reviews.

Simple Whole Wheat Bread

The only bread recipe that has risen for us - maybe because we are canadian! The recipe is bang on! It works just as it is written. We too have been on a holy grail and are delighted with this bread.

Italian Chicken

This really very easy. I'm a vegetarian and so have to cook 'blind' for my family. It got a good reception from adults and kids alike. So easy a vegetarian can do it!
