Labneh (Lebanese Cream Cheese)

This is a great recipe, and a lot of fun to play with. I didn't have a cheesecloth the first time I tried it, so I just used some paper towels, and it was still good. I also didn't want 4 lbs, so I cut in down: 4 cups (one 32 oz/2 lb container yogurt), 1/4 tsp salt, and 1 T olive oil. One night, I made fajitas and didn't have sour cream- my family and i tried this and it was perfect! This is versatile and so easy.

Cajun Style Baked Sweet Potato

This is a good recipe...a simple and easy way to spice up potatoes. If you try this, make sure you cook the sweet potatoes in foil...I suggest cooking them in foil till almost done, then adding the olive oil and spices (so the top gets a little crunchy). If you cook them without foil, they get too dry. Also, to spice these down (esp. for kids) or to get the sweet-and-spicy effect, drizzle a little honey on (instead of) or with the olive oil. (This is really good for reheating them.)

This is delicious and very easy to make. I did mine without the pasta and it was great. My only suggestion is to add more lamb...it got a bit lost in the stew.

Baklava

Absolutely the best baklava recipe I've ever used! I woudln't change a thing. Hint for first timers--when you do the top layer of 6-8 sheets of phyllo dough, put a layer of butter between every two. I didn't, and so the top layer was completely unconnected to the rest of the baklava.

Pico de Gallo Chicken Quesadillas

I actually just used this recipe to make a pico de gallo salsa for fajitas- and it was excellent! It was fresh and flavorful, and incredibly easy. I also recommend trying the pico de gallo from this recipe over the Sweet Corn Cake (recipe on this site)

This recipe is great if you are willing to make a few obvious changes (especially to cut down the fat.) I took other reviewer's advice and cut the sauce in half and broiled the eggplant, and it was wonderful.

Tres Leches 'Three Milks'

This recipe is delicious and very authentic. It's a sweet, moist, and not too heavy cake (and great w/ strawberries) I used 1 1/2 cup heavy whipping cream, 1/4 cup sugar and 1/2 teaspoon vanilla for the icing...I think raw egg is gross.

Delicious! Like the corn side dish you get at Chevy's..but more authentic tasting. I suggest doubling the recipe but still baking it in an 8x8.
