Christmas Fruitcake

This cake is deeeeliscious!!! Good thing I made four right away because it hasn't been 10 weeks yet and we already ate two loaves. My kids love it too. I found that the molasses was a bit too strong for my liking so I made another batch of 6 (that's how yummy it is) with a combination of dark molasses and a lighter molasses. The batter tasted great but I haven't tried the actual cake cause I am still ageing it. I made two with Brandy and the rest with Rhum. Will update when I finally taste the next batch. Can't wait to serve this for Christmas and New Year. I'm sure my guest will love it too. Thanks for sharing this recipe.

Asian Lettuce Wraps

These were fantastic. I didn't have water chestnuts so I used canned palm hearts instead and they still tasted great. Tried it with pork and water chestnuts too. Will try it next with ground chicken. I think the hoisin sauce does the trick. Very versatile recipe. I seem to prefer wrapping it in iceberg lettuce. It gives it more crunch. Yummy! Thanks for sharing this recipe Rachel.

Gourmet Sweet Potato Classic

I was so excited to see my kids "fight" over this dish as one reviewer mentioned but I was quite disappointed. I only used 1/4 cup of sugar for the sweet potatoes and the kids/critics still found it too sweet.

A Simply Perfect Roast Turkey

Great recipe / technique. This was a moist turkey and I didn't mind eating the leftovers. I put 1/4 of the butter in between the skin and the meat. Used chicken stock since I didn't have turkey stock. Delicious! I wonder how to get the bottom of the turkey to brown though.

Libby's® Pumpkin Roll with Cream Cheese Filling

This was a great recipe. I adjusted it to make 13 servings since I used an 11 x 17 cookie sheet pan instead of a jellyroll pan (which I don't have). I added the chopped walnuts into the cream cheese filling instead and it was awesome. I also tried the different methods of rolling (towel vs parchment paper) and found that the towel version with lots of powdered sugar worked best. It absorbed the moisture from the steam of the hot cake. After taking the pan out of the oven, i sprinkled the cake with powdered sugar, put the towel on top then another cookie sheet on top and flipped it over. Then I peeled the parchment paper and rolled it up. It came out perfect. Made these as Christmas gifts and got great reviews.

Chocolate Crinkles II

I finally found the perfect crinkles recipe. I've tried some recipes using butter and it came out too flat. A friend suggested I use butter flavored oil. I will try that next time. But this recipe I followed exactly and it came out perfect.

Fabulous Fudge Chocolate Cake

This wasn't the chocolate cake I was looking for. Kids didn't think it was that great either. I increased the chocolate but still wasn't chocolatey enough. I will continue looking for the perfect chocolate cake recipe.

A-Number-1 Banana Cake

This is a wonderful banana cake recipe. I have made these several times as a cake or muffins and they have always come out perfect. I add 1 tsp vanilla and instead of nuts I add a cup or so of chocolate chips. The kids love it!

Awesome Carrot Cake with Cream Cheese Frosting

This was the first carrot cake I ever made and will ever make. It is really delicious. I did lessen the sugar and the oil and added more cinnamon. So easy to make and the frosting is amazing. Thank you Tracy for this recipe.

Bake Sale Lemon Bars

Delicious! I baked mine in a 8.5 x 11 glass dish and was satisfied with the thickness of the bars. I did't change anything in the crust although baked it in a convection oven at 325 deg for 20 minutes. I kept an eye on it since other reviews said 20min was too long. I followed some other suggestions and added 4 tbsp flour, 1/2 cup lemon juice, some lemon zest. Baked it for 25 min and it came out really great. I personally found it a bit too sweet so will try to lessen sugar next time. My kids just loved it. Next time I will try to use a bigger pan and make thinner bars. I kinda liked the chewy browned sides.
