Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

My husband raved about this! He said it was so good it could be served at a restaurant. The second time I made it I substituted homemade pepper jelly for the apricot preserves. Gave it a nice kick.

Creamy Rice Pudding

The first time I made this rice pudding I didn't have any raisins, but I did have some dried cherries. I cut them in half and used 2/3 cup. I also used almond extract instead of vanilla. SO DELICIOUS! My husband and I ate the entire thing. This is the only way I make it now and my husband requests it all the time!

I made this for my son's first birthday party. I used rainbow sherbert instead of strawberry, but it turned out delicious! Super easy to make too!
