Fajita Marinade I

This was so good! I omitted the water and added a splash of cider vinegar and a bit of cilantro, and I only added a dash of cayenne. I later realized the recipe called for four cloves of garlic - I thought it was only one. It still turned out great. I marinated sirloin steak for about 8 hrs. I then broiled the steak. I sautéed bell peppers and onions. I boiled the used marinade and added a couple splashes of it to the peppers and onions. Then I sliced the steak and threw it all together with some fresh cilantro. Thanks for the recipe. It was so much better than using the packaged powder seasoning!

Broccoli Cheese Soup

Classic Goulash

Cheeseburger Soup I

I just made this soup and it is so good! I made it as written except I chopped the carrots instead of shredding them and I used 8 oz. Velveeta instead of cheddar. Will definitely make again. I may use another cup of broth because the cheese makes it pretty thick.

World's Best Lasagna

This takes a lot of time but it is worth it. It was wonderful. The only change I made was I did not add fennel seeds because I don't really care for them.

Caesar Salad Supreme

This was so delicious! My dinner guests raved about it. The dressing was so easy to make. I had extra dressing left over and ate salads for the next two days with my lunch because I just couldn't get enough!

Classic Macaroni Salad

I put a little less sugar, don't use carrots, and haven't tried it w/ green pepper only because I usually don't have any. But I love this macaroni salad and I almost never like macaroni salad. I don't know what the difference is, but this one's wonderful!

Easy Shake and Bake Chicken

This was okay but I wouldn't make it again. I cut the butter back to 3-4 tbs and it was still pretty greasy. Plus I added a lot of seasoning and it didn't really have much flavor. I used all drumsticks. The skin was the best part, as it usually is w/ fried chicken.

Mexican Bean Salad

I would rate this higher if I could! I think the only change I made was I cut back on the oil a little, just a personal preference. It was so good. The day I made it, I kept getting it back out of the frig to "sample" it. It makes a ton! It'd be good for a summer potluck.

New Red Potato Salad

This potato salad is great. I love it. I use russet potatoes because it's what I have on hand. I think it's the vinegar that makes it so yummy. And I use miracle whip instead of mayonnaise.

Easy Slow Cooker French Dip

This is wonderful! I've made it twice now and the 2nd time I realized I had no beer. It was still good w/out it. I bake the bread for 5 minutes but then I turn on the broiler for a minute or two to toast it. This sandwich is even better if you add sliced provolone cheese!

Boneless Buffalo Wings

I use 2 cups of flour and omit the cayenne, and I use a package of boneless chicken tenders. I fry them in my deep fryer for 7 minutes then put them on a cooling rack while I'm finishing the others. I'm the only one that likes buffalo sauce in my house so I just put a few cooked strips in a ziploc w/ a bit of Frank's Redhot buffalo sauce and shake it to coat. My family eats theirs w/ honey mustard or BBQ sauce for dipping. The prep time is definitely more than 10 minutes but it's so worth it! These are restaurant quality.

Mom's Best Peanut Brittle

This was my first time making peanut brittle & I was very nervous but it turned out wonderful. Every time my husband ate it, he said it's the best he's ever had. I'll now be using this recipe every Christmas.

Best Steak Marinade in Existence

The only changes I made were no hot sauce & cut down on the basil a little. It smelled wonderful. My steaks marinated for almost two days. They were okay but for a steak they tasted way too herby. The parsley & basil just didn't seem to go w/ steak. And even w/ the soy sauce, I thought it needed more salt.

Candied Yams

This was super easy and quick to prepare. I was disappointed because a lot of the marshmallows melted so it didn't look very pretty. But it tasted wonderful. My family loved it. I think next time I'll use less brown sugar and more marshmallows or maybe big marshmallows.

Seven Layer Taco Dip

I left out the green pepper & lettuce. And after mixing up the sour cream & cream cheese, I left out about half of it - it seemed like way too much. The finished product tasted really good. I'll definitely make it again.

Frijoles a la Charra

I left out the beer and I used rotel canned tomatoes/green chiles instead of the tomatoes & peppers, and I soaked the beans first. I had to cook the beans several hours longer than called for to get them done. By that time the tomatoes had pretty much disintegrated. The finished product tasted good but not much different than my ham and beans recipe, not really like a mexican side dish.

Kelsey's Favorite Stuffed Green Peppers

This recipe has potential but needs changes. I ended up w/ about double the filling I needed and my peppers were big and I didn't even use all the rice. Next time I'll use 1/4c of rice and about 3/4c beef.
