Rhubarb Cake I

This was really tasty! I reduced the amount of white sugar by half and used frozen rhubarb instead of fresh (baking the cake for one hour instead of 45 minutes). Will make again!

Trinidad-Style Curried Potatoes (Aloo) with Green Beans and Shrimp

This was pretty good; I used double the amount of potatoes and about 2/3 the amount of spices which I thought was plenty - I think adding the full amount would really overwhelm the other flavours. Overall, this tasted nice and had a good kick to it, but I'm not sure I'll make it again.

Grandmother's Buttermilk Cornbread

I just made this recipe, and it's fantastic! I reduced the sugar to 1/2 cup, and I substituted whole milk for the butter milk and 2 tbsp baking powder for the baking soda since that's what I had on hand. Since I only have a 9 x 13 baking dish, I used that and reduced the baking time to 30 minutes. I will undoubtedly make this again.

Homemade Focaccia Bread

I've never made my own bread before, and this recipe was easy to work with. I found the dough far too sticky to knead initially, so I ended up working the flour into the dough with a wooden spoon and then by hand once the dough firmed up. Like other reviewers, I added in some herbs (herbes de Provence in my case), parmesan cheese and cut down on the olive oil. After twenty minutes the focaccia had a nice golden crust. This is definitely a recipe I'll use again in the future!

Good Old Fashioned Pancakes

This is a great pancake recipe. I adjusted the recipe to make 6 servings (which became 4 relatively large pancakes) and reduced the amount of salt as per other reviewers. The pancakes came out very fluffy and light - couldn't ask for more! Will definitely use this recipe again.

Molasses Cookies II

These are delicious! My brown sugar was dry as dust so I substituted 1 cup of granulated sugar and reduced the flour by 1/2 a cup. These still turned out perfect and I will definitely use this recipe again.
