It didn't taste good. Gave it a go. AVOID this recipe unless you like sweet, bland drinks. Rum at least should have been dark a Meyers or Tortuga!

Roux-Based Authentic Seafood Gumbo with Okra

Disappointing. Any Cajun knows NEVER add file. It becomes stringy when heated. It is ONLY to be added on the rice before you add gumbo. This was very runny and thin. For 6c of water it is one cup of roux. In addition, the veggies are added TO the roux. This stops the cooking and adds flavor to the oil since you aren't using sausage. Look further, this is not authentic or worth the expense. I was severely disappointed. Be warned. Waste of money.

Original recipe for 65 people! WOW! Cut it down for 20. BLAND! No onion, no garlic, no bell pepper or capers. Very dry. Eggs bind, but add no moisture. Very disappointing.

Jalapeno Popper Dip

Too salty, too greasy. I doubled the jalapeno's & cut mayo in half . The cheddar made a layer of grease that the crackers soggy Truly a disappointment.

Very disappointed in this recipe. Ketchup clashed with velveeta. 2nd batch I used chili sauce w/a pinch of cayenne. MUCH better results.

Do not use thick cut bacon! It was all I had, but we LOVED this!. Use only FRESH jalapenos! The toothpick needs to go thru the bacon & jalapeno.

Healthier Restaurant-Style Buffalo Chicken Wings

Flavor very weak. Flour was clumpy and the wings stuck to the pan. No direction to spray pan. 30 minutes made soggy wings. Next time, NO FLOUR!

Hearty Halibut Chowder

Used fresh caught rockfish. Diced carrots, upped cheese, red pepper flakes and heavy cream. Add cream AFTER fish is cooked, milk/cream curdled. Adding milk AFTER fish cooked would have made it 5 stars.

Cajun Boudin

As a Cajun, it was with great trepidation I attempted this recipe. Cilantro? Destroys the true flavor. It reminded me of Vietnamese sausage. There is no bell pepper in boudin. Also, the rice is medium grain and cooked to the sticky stage. VERY disappointed in this recipe. Better recipes can be found online.

Awesome Egg Rolls

The egg destroyed the flavor and texture. I added turmeric and 5 spice powder. I also sauteed cabbage mixture until just starting to wilt so it wouldn't poke through wrapper AND there wouldn't be large air pockets when cabbage wilted. Recipe on back of wrapper much better

Chicken Andouille Gumbo

As a Cajun, this is a Creole Gumbo. We Cajun's don't put tomatoes IN our gumbos. It's okay, but not by any means good. The roux is thin and not enough to make a true gumbo, very soupy. NEVER add file to a cooking gumbo, it turns stringy. File is ALWAYS added to bowl of rice THEN gumbo is ladled over rice. So recipe is fair to middling. Much better recipes available, even on this site.

Extreme Banana Nut Bread 'EBNB'

French Onion Soup I

Very happy with recipe. As there are 6 different types of red wine; I used a Shiraz (or Shirah). It has the deepest flavor of the reds; not sweet at all. I used 4 vidalia onions and no flour. I pressure canned the soup after I tried it. It took over an hour for the onions to turn brown, so be warned. I didn't make the crouton or cheese, I'm allergic to milk. Followed the recipe to a T; except for the flour. Very impressed, thanks for posting!
