Meatloaf California

Reviewed: May 3, 2007
I liked the recipe, but made some changes. I used three different colors of bell peppers for color and presentation. Also, I used bread crumbs instead of oatmeal... and the only herb I used was parsley. I didn't make the sauce for the topping because it seemed entirely too sweet for meatloaf! I loved it!

Uncooked Banana Pudding

Reviewed: Apr. 27, 2007
LOVE IT! When I make this for home, I leave the bananas out and cut them on top fresh when I serve after dinner. It keeps them from turning brown when the pudding is stored in the frige.

Blackened Tuna

Reviewed: Apr. 27, 2007
Exceptional! My favorite tuna steak recipe. I use enough cajun seasoning to generously cover the steaks... I don't go by the 2 TBSP. Yummy!

Veal Mozzarella

Reviewed: Apr. 27, 2007
My favorite Veal recipe!!... you have to season the meat well before putting on the flour mixture, otherwise the Veal doesn't have a lot of flavor--An all-purpose spice works extremely well!

Grilled Fish Steaks

It was good, but I prefer blackened tuna steaks with cajun seasoning.

Poached Salmon II

Reviewed: Mar. 31, 2007
I thought it was fantastic. I made a few changes in the recipe. For extra moistness I ended up doubling the wine (I used Sherry Wine) and water... and using about 2 TBSP of lemon juice. I also pre-seasoned the meat with ground pepper, garlic salt (I was too lazy to cut fresh garlic) and Old Bay. It was delicious!!!

Baked Ziti IV

Reviewed: Mar. 28, 2007
This recipe was OUTSTANDING! I will definitely make it again. I took someone else's advice to add red wine... GREAT IDEA... it makes a difference! The only problem is I used a garlic and onion tomato sauce and still added the regular garlic and onions... it was a little much, but was still good. I'd recommend getting original tomato sauce as there are other ingredients that spice it up!
