Chicken Biscuit Pie

Reviewed: Mar. 8, 2010
I made substitutions, of course, with what I had on hand. I only used about a cup of chicken, threw in 2 finely diced potatoes, 3 chopped carrots, some frozen peas, canned milk for fresh, seasoned with rosemary, thyme, salt, pepper, and granulated garlic. I substituted butter for the shortening. Following others advice I made sure to prepare the biscuit mixture in advance so I could drop it onto piping hot chicken mixture. I cooked the chicken mixture in my oven friendly skillet and so when I dropped the biscuits in I just put the entire thing in the oven. I baked it at 400 for about 35 minutes. It was absolutely delicious!! Good winter comfort food.

Buttermilk White Bread

Reviewed: Jan. 31, 2010
I LOVE this recipe. I made changes only because of what I had on hand: I substituted half the white flour with whole wheat flour, and only used half the honey. The texture is dense but not too much, the flavor is delicious and the crust is perfect for slicing as sandwhich bread. Also, I only cook my bread in the machine until the dough cycle, at which point I pull it out, punch it down and shape it into my loaf pan, baking it on 350 degrees for 30 minutes.

Bill's Sausage Gravy

Reviewed: Oct. 26, 2009
This is the recipe I have used for years and I don't really measure anything anymore. I usually use canned milk, it gives it a creamier flavor. Delicious!

Baked Pork Chops I

Reviewed: Oct. 11, 2009
This is by far the most delicious way to eat pork chops I've ever come across. Easy to cook too. I cut the baking time in half, since I had thinner cuts of meat, and substituted vermouth for the wine. Delicious!!!!

Fresh Tomato Shrimp Pasta

Reviewed: Sep. 5, 2009
Oh so delicious!! I followed other suggestions about adding the red pepper flakes which was fabulous. I had some chicken spinach feta sausage that needed to be used to I used it instead of the shrimp, grilled and sliced. That was so good, and I can't wait to try it with shrimp. I loved the sauce, thank you for sharing!

Hamburger, Potato, and Kidney Bean Casserole

Reviewed: Oct. 3, 2007
I followed the instructions exactly (except adding some spices as other reviewers suggested, and I added some water) but it still turned out overly dry. I will try to modify into a crock pot recipe, because the kids LOVED it and ate second helpings. I think cooking in the crock pot might help retain some moisture. Overall, this is good comfort food for a cold evening.
