Banana Cake VI

Reviewed: Jun. 26, 2012
I didn't have buttermilk, so I added 1 1/2 tablespoons white vinegar to 2% milk to sour it. I also used 4 med/large bananas. I baked it in two 9-inch springforms at 300F for 1 hour and 10 minutes. I did freeze the cakes immediately after I removed them from the oven for 30 minutes. I then removed them from the pans and wrapped them in plastic wrap and froze them to use a week later. The cake was very moist and flavorful. Will make again!

Spinach Quiche

Reviewed: Nov. 6, 2011
Very Yummy. I added fresh spinach instead of frozen, 1 Tbsp onion powder instead of fresh onion, left out the butter and the cheddar completely, added 4 extra eggs, 1 extra cup of milk and 2 cups of plain Feta. I also used a 9 x 13 and skipped the pie crust.

No Bake Cookies III

Reviewed: Nov. 11, 2010
Used butter instead of margarine and old fashion oats instead of quick oats. Boiled for the 1 minute and had plenty of time to put them on parchment paper before they set up.

Banana Bread V

Reviewed: Nov. 11, 2010
Followed others advice about adding 1/2 c white sugar and 1/2 cup brown sugar. Also, added 2 eggs and 1 tsp cinnamon. It turned out good, but was lacking a really strong banana flavor. My bananas were very ripe, too.
