Cilantro and Garlic Potatoes

i stink at frying in oil (and i dont care for the taste), so i baked my potatoes instead at 400 for 25 min. then continued with the recipe. perfect! my two favorite flavors in one dish--could it be anymore delicious?

Homemade Mac and Cheese

this is by far the best mac and cheese recipe i have ever encountered! the roux made the sauce so thick and cheesy without the "floury" taste. I didn't have elbow macaroni so i used the spirals (i find they catch the sauce better. i also added chicken, which i cut up, seasoned with salt and pepper, pan-fried it in olive oil until browned. i mixed the chicken in with the noodles before pouring the sauce. oh, also, try toasting the breadcrumbs (just as the recipe says) in the same pan you cook the chicken in! the leftover browned chicken bits adds soooo much flavor. Major hit with my roommate and my boyfriend!!!

Sloppy Joes II

really good! i put the mixture in a 8x8 pan and layered shredded cheddar cheese on top. then i made the Golden Sweet Cornbread (on this site) batter and poured it over the beef mixture and cheese, baked for 20 minutes at 400 degrees. insta-meal!

Honey Crunch Pecan Pie

The HIT of Thanksgiving at my house, and my best friend's house! Puts other pies to shame. If you are concerned about curdling your egg mixture with the hot butter, try introducing a little of the egg mixture (like a tbsp) into the bowl with the melted butter and whisk for 30 seconds. Repeat another two times and the butter should be at the right temperature. This pie is worth the extra effort!!!

Grilled Bacon Potatoes

i made these for my camping trip and due to the size of the potato, it took about an hour and a half to cook them. I left them in the coals of our campfire. The bacon was delicious, but our brown sugar mixture settled on the bottom. still good!

i was never a fan of processed cheese so i'm sure it's just the product itself. i had to use 3 cans of chili to get people to eat it. ended up throwing most of it away.

Chicken Tikka Masala

just like my favorite Indian restaurant! i didnt have cayenne, so i used 1 tsp of chili powder. also, i took the advice of others and only put in 1 tsp of salt in the marinade and 3/4 tsp in the sauce. i upped the cilantro to 1/2 c because i LOVE cilantro. i paired it with this site's garlic cilantro potatoes recipe and their roti one (which was more like a naan recipe because it lacked the flaky layers). it was a knockout with my guests--even the ones that dont normally like Indian food!

Lime Chicken Soft Tacos

wow. i may never make tacos the same way again! i added 1/2 c fresh cilantro in place of the oregano (as many suggested) and added 1/8 tsp chili powder for kick (i was cooking for two, so you can measure it to taste). this is my new favorite staple! thanks for sharing!

Dirt Cake I

Made this for my boyfriends birthday. It was okay, i'm not a big fan of oreos. but he loved it! i used chocolate pudding instead of vanilla and made my own whipped cream instead of cool-whip(too chemical-ly!) I also made sugar cookie stands and used teddy grahams as audience members at a monster-truck rally!

Chili I

Absolutely delicious! Won 3rd place in my company's chili cook-off (which really means 1st since we usually award our clients)! Slight changes to suit my tastes, however. I dont like the texture of beans, so as filler i substituted hominy (mexican corn) instead. i also omitted the cayenne pepper because i ran out. the recipe is a little sweet (the way i like it), so to make it more savory, i also added 1 pound of smoked bacon, cooked, but not crisped. Pair it with sweet cornbread (there is a great recipe on this site that i used with this one) and you have a winner!

French Toast Casserole

i added blueberries in the casserole and 1/4 cup brown sugar mixed with the cinnamon for the topping. Delicious and no syrup required! try it with cubed sourdough for an interesting twist.

Golden Sweet Cornbread

I'm convinced that this recipe won me 3rd place at my company's chili-cook off. I was too lazy to soak my cornmeal, but it came out moist and not the slightest bit crumbly anyway. Paired great with a chili recipe from this site (Chili I). I will be making this again!!!

Big Soft Ginger Cookies

The flavor was exactly what i was hoping for. However, halfway through baking these, i realized i forgot to use oj, as some readers had suggested! oh well, next time! i made these for a holiday cookie exchange, so i rolled them in homemade colored sugar. why did the red ones rise perfectly and the green ones stay flat and greasy? they both came from the exact same dough that was chilled between batches. So strange! Any thoughts?

omg, really good. i love the smooth and creamy texture. i also opted to make it on the stove, i dont trust microwaves. i skipped the double boiler and just melted the butter and milk together over medium heat, added 1 teaspoon of vanilla and then turned the heat to low and melted the chips in. when the mixture is almost melted, turn off the heat and add walnuts. soooo good!!!

i'm not the biggest fan of white chocolate ( i made it for my bf), but this came out beautifully. i cheated and used raspberry jam, heated in a small sauce pan over med-low (time concerns). thanks, i will be making it again!

Extreme Chocolate Cake

i made these into cupcakes and mini-cupcakes. instant hit! i only wished i tried the frosting in the recipe (my friend insisted on his) absolutely delicious chocolatey flavor, moist in the middle with a little slight crunch in the tops. i baked the mini cupcakes for only 15 min. only problem i had was getting most of them out, even though i greased the pans like a mad woman. next time, i will buy paper cups. i will not need to buy cake mix again!
