Brownie Crackles

This was disappointing. I used a 19.5 oz box of Pillsbury brownie mix. After the 1 cup of flour, it still seemed to soft, but I tried baking 8 cookies as originally written. The dough was falling apart into 2 or 3 pieces as I tried to roll it in the powdered sugar. Then while baking, they spread out way too thin. I added a little more flour to the remaining batter, just a spoonful at a time until it seemed to hold its shape better. The next 8 cookies I baked seemed to hold up a little better while rolling, but still spread out very thin while baking. Not sure what I'm doing wrong, perhaps a different brand of brownie mix would work??

Red Velvet Cupcakes

Where did I go wrong.....I followed the recipe exactly. Even opened up a brand new can of baking powder. I ended up with 28 flat, greasy red cupcakes. :( On the positive side, the color was great. Maybe 1 cup of butter and 1 cup of sour cream is too much??

Cream Cheese Penguins

These are worth making just for the conversation piece and the giggles from the kids! I will use flavored cream cheese next time, plain cream cheese is just too bland. For assembly: I cut the feet and beaks in advance, and piped the cream cheese into the bodies. Then my kids, 13 and 10, assembled the penguin. For a fun winter party idea, we served with a cheese ball recipe that we rolled into 3 different size balls and assembled to look like a snowman. Use whole peppercorns to make the eyes, smile, and buttons, and a baby carrot finely whittled down for the nose.
