Simply Parmesan Chicken

This chicken was awesome. But I need someone to tell me how to keep the breading on the bottom of the chicken from getting soggy. I don't know if it's the type of baking dish i used or what. But overall, this chicken tasted really great. At the end I put some red sauce and cheese on top then put it back in to let the cheese melt, and served with pasta.

Strawberry Jam

Perfect. I did lessen the amount of sugar. I also used all organic strawberries and organis sugar, organic really is better tasting as well. Plus if you have at least 1/3 of under ripe strawberries, than it will have more natural pecin and not be so hard to thicken. Generally it takes about 40 minutes of boiling. Then, like i said depending on the strawberries, you may want to let them cool, then cook them again to a boil. The boil, cool, boil method also extracts more natural pecin from the strawberries as well. I loved this jam. I will make this as Christmas gifts.

Spinach and Strawberry Salad

I'm not much of a spinach fan, so I used fresh Basil instead. Wowwy. It tasted great. I've had basil salads before, but this takes over.

Honey Baked Chicken II

I love this recipe. My husband went crazy for it; and for the first time my 3 year old didn't ask for ranch dressing with his chicken.Lol. The only thing I changed is that I use chicken breasts instead of a whole chicken. The second time I made this I used Old Bay instead of Curry Powder, it was awesome.

Garlic Spread

This was awesome the first time I made it. But the second time I made it I sauted the garlic in the butter in a pan then mixed everything together (warm butter helped soften the cream cheese too) and it was absolutly great. Of course I added more garlic too.

Good Old Fashioned Pancakes

So simple. Sometimes I add frozen (fresh) blueberries or frozen bananas (fresh). I freeze all my fresh produce, lol. Mainly for green smoothies, but they are great for adding to recipes too :D

Ann's Dirty Rice

I've made this before I went vegetarian and it was a great base recipe. You can pretty much add anything you want to it. I plan on making a chicken version (replacing beef with chicken, and beef broth with chicken broth) of this tonight for the family and vegan version for myself (just leaving out the chicken and using veggie broth and cream of celery soup).

Key West Chicken

I am going to try this tomorrow night. But I think I will cook it differently. I'll bake it in the oven and baste it with the sauce every 15 minutes or so, just like I do with my honey mustard chicken.

Onion Roasted Sweet Potatoes

This sounds awesome. I will be making this for Thanksgiving this year. I will use the suggestion to cut the temp down to 400. I also think for those of you that have issues with burning the onions, maybe try cutting the potatoes smaller so they will cook faster and you wont need to cook them for the full amount of time. I love sweet potatoes, but I've never liked the traditional recipes that always add sugar. I never saw the point in adding sugar to something that is already sweet. Guess I just don't have a giant sweet tooth.
