Baked Chicken Nuggets

I was skeptical about this recipe, despite the ton of butter, as my kids are completely hooked on frozen chicken nuggets. I was amazed, as were my kids at how good these were! I used whole wheat bread crumbs (made from just drying my old ends of loaves of bread) and added italian seasoning. All the seasoning I was just winging it, but it turned out to have perfect flavor. I only cooked mine about 15 minutes, used a rack like others suggested. It didn't turn out as crispy as I hoped, but still delicious. Though it didn't taste buttery, it seemed a bit heavy, so I'll try others' suggestions and use buttermilk next time. I'll be using this recipe often. Thank you!

Chicken Oreganato

Kinda bland. For the amount of fat in this recipe (from the thighs & all the oil), I expected it to be tastier. I thought it was ok, but not worth all the oil (that gets wasted in the bottom of the pan anyway). My kids would only eat it once it was drowned in ketsup.

Marinated Ranch Broiled Chicken

Delicious & easy! Doubled the recipe and used the LOW setting on Broil and the timing was perfect. My 6 year old even deemed it so 'perfect' that it didn't need ketsup! :)

Pineapple Salsa

Loved this! Needed a last minute salsa for some fish, this was quick & easy. Didn't have the chiles or green peppers, just added extra red. Also used extra pineapple juice from the can (in the future, I just won't use the orange - tasted fine, but just easier with the pineapple). Will definitely make again!

Roasted Beets 'n' Sweets

My husband found this recipe to try out some golden beets he bought. I was bit skeptical, but OH MY GOSH, these were delicious! I took the advice of another reviewer and used 1tbsp brown sugar instead (though I'm not sure it needed it) and took off the skins of the potatoes. I will definitely be making this again as I ate half the recipe myself! :)

Banana Cake VI

Wow! As other reviewers said, I was a little worried about the instructions (low oven temp, freezer), but figured I'd try it. I also wondered if it would taste much like banana bread (as the batter did), but I was pleasantly surprised how rich and decadent this is! I don't even think it needs an icing, it's perfect without it!

These are amazing!! I missed half the directions (just put mine on a baking sheet) and they oozed out. So next time I'll try to seal them better. But I will be making these over & over!!!

Green Slime Smoothie

Love this! I originally tried this for St. Patrick's Day, but the strawberry/spinach combo made brown (even with extra green food coloring). So the color isn't truly green, but it got my 3 & 5 year olds to eat spinach, so it's a keeper! I lowered the honey to a little over 1 Tbsp & added protein powder. Will be making again & again!

Marinated Grilled Shrimp

Awesome marinade! We've found it's easier to grill shrimp in a basket, so we did that instead. Otherwise followed the recipe to the letter and will DEFINITELY make again! My go-to marinade for shrimp!

Acorn Squash with Apple

I love acorn squash, but my 2 young kids aren't a fan unless mixed with apple. I usually puree the two, but this is a nice change (be careful not to overcook the squash). Added extra apple for the kids, but will definitely make it again!

Whole Grain Waffles

Okay, I haven't even finished making the waffles and I have to review - these are the BEST waffles! And they're healthy? I never would have guessed (and I'm always trying to make things healthy!) My 5 year old kept stopping playing to come sample the waffles too (and both of us were eating them without any topping). If I could rate this higher, I would!!!

High Protein Peanut Butter Balls

I'm rating this high, despite changing the recipe quite a bit. This is a great idea, love trying to make a healthy recipe that tastes good! My modifications: only had vanilla protein powder so I added 2 Tbsp cocoa, used ground flax seed, and substituted some powdered peanut butter to save on fat (new thing I found at the store - it's real peanuts and you just add water .. not bad!) I think since I didn't use all the real peanut butter, mine are a little more runny, but they're still quite tasty! I'll be experimenting with different quantities the next time I make this ... so, in other words, will DEFINITELY make again!

Corn and Zucchini Melody

Love this! Sauted the veggies in olive oil instead of bacon fat, used bacon pieces (packaged) instead. Could have done w/out the cheese, didn't need it. My kids didn't like it, but I loved it!

Dill Pickle Meatloaf

I decided to make this because my picky girls don't really care for meatloaf, but LOVE dill pickles. My 4 year old DEVOURED it! (My 2 year old, well, she decides based on looking at something whether she'll eat it, so I won't fault the recipe) :) I'm not a big fan of dill pickles, but I thought it was excellent! Very moist, will be making again and again!

White Chip Chocolate Cookies

Excellent! Instead of all white chocolate chips, I used 1 cup white & 1 cup milk chocolate. The mix IS very hard to mix, but it doesn't seem dry. Don't overcook these - 8 minutes is all you need so they stay nice and chewy in the center.

Grilled Shrimp and Apple Skewers

LOVE this recipe! Used Fuji apples instead (what I had), so the apples were a little more crisp, but still good. Loved how the sweet parts of the marinade somewhat carmelized on the shrimp. My husband couldn't stop raving about this recipe, will definitely make again!

Quick and Easy Alfredo Sauce

SO Easy and SO Yummy! Used FF cream cheese (there's enough fat in the butter!) and extra parmesan. It thickens up quite a bit AFTER cooking, I had to thin mine out w/milk (I let it sit to cool and it thickened a LOT). Both my girls (ages 2 & 4) wanted seconds!

Caramel Apple Pork Chops

Yum!! Doubled the sauce & omitted the nutmeg, pecans & salt/pepper. Cooked the apples in water, then drained & added butter & brown sugar. Kept cooking until almost carmelized, cooked chops so apples & chops were done at same time. Kids didn't like this, but that's okay, my husband & I ate their leftovers!

Peach Bread

Great recipe!! I adjusted it a bit - used only 1 1/2 cups sugar and unsweetened applesauce for half the oil. Used fresh peaches (added about 3 cups) and used whole wheat flour. I only gave it 4 stars because the batter seemed too thick and I had to add quite a bit of water (maybe the canned peaches would have added enough moisture?) I will definitely make again, especially when I have peaches that need to be eaten!
