About this Cook
I have an adventerous palette and enjoy trying new things. I sometimes find that time in the kitchen can be a bit of therapy after a long day. Lately I have been doing cooking classes/demonstrations at a local Kitchen store and having a great time with it. So far I've shown Pork & Manchego Quessadillas with Tomato Chutney, Avacado Salsa, Spinach and Feta Bruschetta, Shrimp Pate, Seafood Salad in Phyllo and Hummus three ways.
My favorite things to cook
Appetizers as if you couldn't tell from the "about me" section! I especially like working with recipes that involve fish, cheeses, herbs, pastas, and practically any veggies. I like to cook and eat spicy-hot food and enjoy developing and writing my own recipes-which I look forward to sharing. Any obscure, rare or unusual ingredient, I'm all-about trying out!
My favorite family cooking traditions
Seafood with a traditional Christmas Dinner. Also, my son and I like to make a Chicken and Angel Hair Pasta dish together. We like experimenting with different seasonings- he has a milder palette than I so he's great help on not "overdoing" a dish, so it is traditional that when I'm writing a new recipe- I have him help me keep it "tame".
My cooking triumphs
Parmesean Crisps with Arugala and White Truffle Oil. Salsa is always a hit, and Mini Ruebens.. Who knew everyone would be so crazy for these? the Shrimp Pate was a real hit as well.
My cooking tragedies
Baking- Period...LOL and also Garlic Chile Sauce. No matter how hard I try, I can't get the flavor right!

Homemade Stewed Tomatoes
You just can't beat fresh toms! Prepared this way they are tasty and way easy. I am however anti sugar in them. Add some crumbled bacon & black pepper and serve over a hot bed of white rice and you've got a great Southern side dish.

Spinach and Sun-Dried Tomato Pasta
This recipe is great as written but if you have a little extra time I'd reccommend soaking the sun dried toms. in redwine and chicken broth and throw in roasted minced garlic to the broth & wine- very aromatic!Leave them in about 1 hour. Also this recipe converts nicely in to a great dolled up version of Meditarrean Cous Cous dish. Just sub-in Cous Cous in place of the Penne.
