Zucchini Soup I

Delicious, with the following modifications: Instead of sauteeing everything in a skillet and then transferring, I sauteed the onions, potatoes, and zucchinis in a large pot, and then added the water (with chicken soup flavoring) to the mixture. When everything was cooked, I used an immersion blender instead of a food processor. I added milk after pureeing everything. Finally, instead of soy sauce I used sherry and Worchestershire sauce (per other reviewer's suggestion). I also didn't feel the need to add potato flakes.

Simple Taco Soup

Serbian Ground Beef, Veggie, and Potato Bake

The meat and veggie filling is simply delicious. I added more wine (1/4 cup total instead of 1/8); omitted the celery (don't like the taste, and it's not really an Eastern European thing); added garlic to the ground beef while browning plus garlic to the veggies when cooking; used just a pinch of ground cloves. In other reviews people were saying that there is not enough starch as it is, so I made mashed potatoes and spread them on top of the meat/veggie filling. Stuck it in the oven for 20 min, and ended up with the most amazing Serbian take on a Shepherd's pie ever! Next time will try to make in the suggested way with potatoes sliced, etc.

Mom's Zucchini Bread

Moist and flavorful. Makes 1 large loaf pan and 1 small loaf pan. Followed 3 suggestions in the reviews: didn't drain the zucchini, used about 2 3/4 cups zucchini (would've been good with 3 cups, too - just didn't have enough zucchini), and substituted 1 cup of brown sugar for 1 cup of white.

Really Easy Chowder

What's great about this recipe is that it gives you a real versatile base of a chowder. If you follow another reviewer's suggestion and add to a can of tomatos a can of water, and then a small can of tomato sauce, you have a perfect beginning of a soup. I add a dash of Sriracha hot Chili sause to give it a kick. I also omit the celery (personal preference) and add sauteed chopped onion. Then add whatever vegetables you have on hand. So far I have made it with califlower and beans (which results in a summery take on a chowder) and with zuchinni and squash. I imagine it'll do well with potatoes and other wintry vegetables, so I am planning on making it again and again. And the best thing is that it is SO fast to make - the only time you spend on this is opening the cans and chopping up the veggies!

Minestrone Soup I

very, very good! Husband kept talking about it. Perfect on a cold night, with a slice of good bread with butter. I used spinach instead of cabbage (more traditional), and tomatoes with basil and garlic. Will definitely make again!

Spaghetti ala Bolognese

Good meaty sauce with more complexity of taste than your typical meat sauce. Ease of preparation is also a plus. I used 1/2 cup of milk, and 1/2 cup of cream - it was not soupy at all.

African Chicken Stew

Very good, warming, and satisfying dish. At the last minute I discovered that I didn't have ground coriander, so I used 1 tsp of curry powder instead of coriander and cumin (since curry has both). The taste was great! Used 2 cups of chicken broth, and additional 1/2 tsp of red pepper flakes.

Very, very good. Plenty of heat and flavor. Drenched chicken in flour before stir-frying it, and cooked the vegetables separately before chicken.

Mom's Shepherd's Pie

I've tried several shepherd's pie recipes, and so far like this is the best. I use instant 4-cheese mashed potatoes (easier to make and better flavor), plenty of Worcestershire sauce, and a bag of mixed frozen vegetables. Easy and fast to make, and the result is tasty and comforting.

Fluffy Pancakes

Amazing! So fluffy and delicious! I did add some milk to the batter since mine came out too dense after I combined all of the ingredients. But the taste is just right! Update: I have made these many times since the first review, and haven't had to add milk at all. The more we eat it, the more we like it, and it has officially become "the" pancake recipe of our household!

Layered Chicken and Black Bean Enchilada Casserole

I used rotisserie chicken and substituted chile pepper for coriander. It was fast and easy to assemble, and both me and my husband were extremely pleased with the results. He kept saying that this is a keeper! Next time I will mix sour cream with the chicken mixture to simplify the assembling process even more.
