Pasta de Sardine

Made only minor modifications (extra 1/2 can of sardines in olive oil, more garlic, less cheese, whole wheat pasta, just a bit of tomato paste and 3/4 C pasta water) but loved it. We always have sardines around. I think this is going to be a staple recipe.

BAKER'S ONE BOWL Brownies

This is my go-to brownie recipe after several years of trying different things. I never add nuts. I always under bake. Occasionally I add chocolate chips, or bittersweet chocolate pieces, bits of candy bar or a little instant espresso into the butter and chocolate mixture.

Portobello Mushroom Stroganoff

This was a wonderful, rich, and hearty dish. Glad I read the reviews before I made it myself as I made a few significant changes. I added a stalk of celery and a smashed clove of garlic in with the onions. I added enoki and shitake mushrooms. In with the broth I added a dash of soy sauce and some white wine and reduced both the flour and sour cream by half.

Oatmeal Blueberry Muffins

I made some modifications to this recipe as recommended by some other reviewers (used 1/2 wheat flour, and used 1/2 C brown sugar instead of white sugar). I also used 1 mashed, overripe banana instead of the oil. I used 3/4 of a cup frozen blueberries, about the same amount of frozen cherries, and then a handful of dark chocolate chips. They turned out quite well, and are still relatively healthy.
