Grilled Salmon with Habanero-Lime Butter

Wow this was probably among the top-three fish dishes I've tried. The Habaneros are only sold in bulk at my grocer so I chose to make several recipes this week using them. The blend of flavors is difficult to describe but I can say that it was a a mixture of creamy sweet and pleasing spice. The left over butter mixture can also be spooned over chicken. My compliments!

Spicy Salsa

Although it's not a quick Salsa to make it is really worth the wait. I spooned out half of the batch and let the other half continue an extra hour and it was indeed spicier. Looking forward to some sport events to try this again.

Baked Salmon Fillets Dijon

My roommate hasn't praised a meal I've made until this one! Delicious! I can't wait for the left-overs tonight! I thought the cooking time was a little to quick. I don't like a dried up piece of fish but I also don't want it mushy. I followed the recipe but after that I dropped the temp. to 375 and left it an additional 10 minutes. This made it just right (for me).

Cheese Fondue

I was a little let down by the oil content in the cheeses I selected. This is a great dish! I am part Swiss and had the pleasure of growing up eating this stuff and take it from me; this is a great version. The white wine and flour were new to as I usually use Kirsch instead (I actually thought this version with wine was better - Sorry Dad!).

Fudgy Chocolate Fondue
