Show-Off Salad

This is a very fresh tasting salad, because of all the fresh and varied ingredients. I think that the cream spread would make a very good dip by itself.

Fiery Fish Tacos with Crunchy Corn Salsa

We had a lot of fun with this recipe. I only put in 2/3 of the cayenne that the recipe called for and that was more than plenty. Was is it about grilling fish that is so much fun?

Company Couscous

I wish I did take a picture of this one, because it is a beautiful and colorful dish. I was skeptical, because I do not normally enjoy cous cous, but this Italian twist on it was great. I did add more parmesan than called for.

BBQ Chicken Pizza

I made this for dinner tonight. I used Bullseye Raging Buffalo flavor BBQ sauce. I was nice and spicy, but I think the sauce was a bit too sweet for my taste. I think that this recipe would make a great appetizer. I would cut the slices much smaller and serve it that way, instead of as a main course.

Spinach Salad with BACARDI® Limon Sauce

Very tasty salad. It looks nice, too. I thought that the dressing ended up a bit watery. If I made this again I would use less olive oil. Also, I used regular lime juice with a couple tsp. of sugar, because key lime juice was not available. The dressing was still a bit tart, but it was liked by all.

Braised Beef Short Ribs

This was the first time I have ever prepared beef ribs. I followed this recipe exactly and the product was quite good. I did refrigerate the meal overnight and then I scooped off the fat and reheated. So, technically I served the beef ribs on day 2, which was better, because the ribs are very fatty and probably would not have been as good the first day. I would make this recipe again.

Roasted Red Pepper and Potato Soup

This soup was great. I make a lot of soup, because it's easy, but this recipe was much better than average. I used Yukon Gold potatoes instead of the Red.

Mile High Shredded Beef

This recipe is certainly one of the best I have found on AllRecipes!! The sauce was wonderful!! I used organic local beef for the meat. The meat could have been more tender, but that is somewhat the nature of shredded chuck. I will definitely make this again. Thank you.

Gyros Burgers

This recipe was a refreshing twist to the "same old" burger. The flavors were great and it cooked up perfectly on the grill. Also, this recipe was very easy to prepare, so even the cooking rookies can make this with ease. I personally left out the savory, but next time I won't. Thank you.

Vegetarian Nut Loaf

This dish could be described as vegtarian meatloaf. I was a bit dry and we did not like the sunflower seeds. As a leftover, I melted cheese on the sliced bread and it was better that way.

Feta and Olive Meatballs

I followed this recipe almost perfectly, except that I did only use 1 egg on the recommedation of other raters. Also, I baked the meatballs instead of putting them under the broiler. This recipe was a very big hit and it was very quick and easy to make. Thanks!!

Phyllo Turnovers with Shrimp and Ricotta Filling

This was my first time working with Phyllo and I had great success. The filling was absolutely delicious. I did do one thing differently. I did not use the oil, only the butter. Try dipping the turnovers in Siracha. It is delicious. Also, I did freeze some filling and made more turovers a couple of weeks later with very good results.

Citrus Mousse

The mousse was very quick and easy to make. Next time I will choose to flavor with one sweet juice and one sour juice. The lemon and the grapefruit juice made this mousse too bitter. I think it would be perfect with orange juice and grapefruit juice or lemon juice and strawberry juice.

Triple-Cheese Macaroni

This was a huge hit at my house. The recipe made more than my casserole dish could fit, so I froze half of it. It came out okay from the freezer, a little dry, but that is to be expected when you freeze pasta. I will definitely make this again!

Beef Samosas

The samosas are very flavorful. I did use 2 sheets of phyllo around each samosa and put them in the oven. I was very pleased with the results. The only thing I did not like is that I had to use too many pots/pans to make this dish and it is time consuming.
