Pasta e Fagioli I

Love it! The only major change I made was to add spinach, because Carrabba's makes theirs with spinach in it, if I recall correctly. I just added the spinach in with the onions when they were cooking, and it worked great. I tweaked the spices a little to taste. I think I might try diced tomatoes in the future, as stewed tomatoes are too big of pieces and I have to break them up before or while eating. Wonderful recipe though, so easy, cheap, *and* delicious!

Thai Red Chicken Curry

Made with some of the changes suggested by other reviewers, this dish was so delicious! I did the two tablespoons of red curry paste, because the sauce looked way too pale with just one tablespoon in there; I may even use more next time, it wasn't too spicy at all. I also added a little bit of peanut butter, though I couldn't really taste it, so maybe I'll add more next time. I used 2 Tbsp of fish sauce, as recommended, and some lime juice, coriander, and ginger. I went with the regular coconut milk, but I think I will get the lighter kind next time, because the sauce was very creamy and I think I'd prefer it a little less so. I used fresh basil instead of cilantro, though I'm sure it is yummy either way. I was very happy with the way it turned out, and I'll definitely be making it again!

Italian Chicken Skillet

Fantastic! Eating this right now after having made it for the first time, and it was a huge success. Very easy and cheap to make, and it makes more than the four servings stated. I added mushrooms and red onions in with the chicken, and then I had to add some water when I put in the pasta, because it wasn't covered by the liquids all the way. I highly recommend this recipe, and I will be adding it to my list of go-to meals, for sure! Thanks a bunch!
