Chocolate Mint Candies Cookies

These cookies were outstanding!!! The chocolate cookie without the mint is even great! I did as some readers suggested and put the mint on the top about a minute after they came out of the oven (after the cookie had flattened a bit). Then once it melted halfway I flipped all the mints over. Once I finished flipping a dozen of them they had melted enough for me to spread out the candy over the cookie like an icing. I put them on a plate in the fridge for about 3-5 minutes just until the mint hardened. It didn't seem to dry them out any and certainly sped up the process.

To Die For Blueberry Muffins

These were outstanding!! I used buttermilk instead of milk and brown sugar in the topping instead of white sugar. Load as much of the topping on as you can manage!!

Carrot Cake III

I used the substitutions/modifications listed in gneebeanie's post and it was fabulous! I made 10 two layer 4x8 cakes to sell at a bake sale. A local coffee shop owner bought 2 and said they were the best carrot cakes she'd ever had! I won't even try another recipe for carrot cake, this one will do for life.

Waaaay too sweet! Okay if you only want a sip, but I like to have a glass full of my cold fruity drinks. I tried adding more ice cream to calm it down but didn't help much.

Best Big, Fat, Chewy Chocolate Chip Cookie

This is great!!! I was looking for a huge cookie for a bake sale and this one was definately the right one. I tried two different pans, light and air-bake. Both were fine but the cookies I baked on the air-bake were thinner and spread a little more. I like them better this way. The others were still wonderful though! Huge!! I also pressed the cookie down with the bottom of a measuring cup before baking. Made them nice and flat, very pretty! Instead of chocolate chips I used two 12 oz bags of baking M&M's for appearance reasons only. (I read they sell better at bake sales) Thanks for the great recipe!!!
