Carrot Cake III

This was very delicious and moist. After reading pages of reviews, I made the following changes: Used 5/6 cup (1/2 + 1/3) oil and 2/3 cup drained crushed pineapple in place of all the oil the recipe calls for. Increased cinnamon to 3 tsp. Used 1 cup white sugar and 1 cup brown sugar. Added 1/2 tsp nutmeg. Frosting: used 3 1/4 cup conf sugar. Baked 37 min. Perfect! Received many compliments. Will definitely make again.

Cheesecake Lemon Bars

These were delicious and got rave reviews at the football party. I halved the recipe and used an 8"x8" pan, lined with foil, and sprayed with nonstick baking spray. I added about an extra 1/3 tsp. lemon zest, 1/8 cup lemon juice, and 1/2 tsp flour. I suggest not pressing the crust all the way up the sides of the pan as the tops of the edges burn and I had to cut that part off. I would bring it halfway up next time. The crust also softens and is a bit cakey with the lemon filling. Still tasty; I was just expecting a firmer shortbread type crust. I will definitely make this recipe again and again to bring to occasions as it was a crowd favorite.

Jalapeno Popper Spread

Made this for a party and it was gone in a flash! People asked for the recipe, which is always a compliment. I halved the recipe and omitted the canned green chilies. I also used 3 large fresh jalapeƱo peppers WITH ribs and seeds as I wanted all the heat I could get out of them. It was medium heat. Next time, I will add another 1 or 2 whole jalapeƱos for more heat. I also mixed the parmesan with some panko breadcrumbs (just eyeballed about half and half) on top and baked it.

Chewy Sugar Cookies

These are excellent! I can't stand hard cookies and these are nice and chewy! I used butter instead of margarine as that's what I had on hand. I stuck M & M's in some and made some plain (did not roll in extra sugar). I actually liked the plain ones better! I have been searching for a yummy, chewy sugar cookie that tastes like the refrigerated dough roll at the supermarket, but is homemade. They do flatten out A LOT and next time, I will try chilling the dough to see if that helps. Despite this, I will definitely make these again and again. They stayed chewy the next day and did not harden up.

Mmm-Mmm Better Brownies

This is a 5-star brownie for how easy it is and how I always have the ingredients in my pantry. They fill that chocolate craving, are easy and so quick to throw together, and do not require a special trip to the grocery store. That's 5-star worthy in my book. They are moist and even better with semi-sweet chocolate chips sprinkled on top. I did use an 8x8 pan and kept true to the temperature and baking time as stated in the recipe. I've made these three times already!

Braised Balsamic Chicken

This chicken was delicious. I wish I had bread to mop up the rest of the sauce! I used fresh tomatoes from the garden instead of canned and fresh basil and thyme (doubled the called for dried amount). Used dried rosemary and omitted the oregano because I don't like it. Will definitely make again!

Honey Mustard Dressing II

WOW, this is REALLY good. I am a big fan of honey mustard dippers and this one wowed me! For such simple ingredients, it is SO tasty - just like in a restaurant! I used Hellman's Real Mayo and store brand Dijon mustard. I might experiment by adding fresh garlic to use as a marinade and I'm curious about other reviews using nonfat plain yogurt. Will try next!

Berry Oatmeal Muffins

I did not have wheat germ, so I used an additional 1/4 c. oats as a substitute. I also did not have regular milk, so I substituted evaporated milk and water (half of each). The muffins came out just okay and I do not believe it has anything to do with the substitutions I made as they wouldn't affect the flavor. They were rather plain and dry. 20 min at 400 degrees is way too long. I baked for 17 min and they were still dry. The topping crumbled off the tops of the muffins. I don't think I would make this recipe again.

Best Chocolate Chip Cookies

These are good cookies, but I have to say, they are not amazing as I had hoped they would be based on their title and the number of positive reviews. Great texture, but too much sugar and not enough salt. I guess I am going back to the Toll House cookie recipe...

Chocolate Chip Banana Muffins

Made this in a loaf pan and it came out very moist. Added an extra banana and used vanilla yogurt and canola oil. Baked for about 48 min and the center was still wet but the edges were getting dry. I also suggest rolling the chocolate chips in a little flour to prevent sinking. I want to know the "extra ingredients" other reviewers referenced from momstoprecipes, but when I tried to find them online that web page was more of a search engine..? Anyone know these secret extra ingredients?

Fluffy Pancakes

I've tried several online pancake recipes and this is the best. I love the vinegar/milk substitute as buttermilk is something I never have on hand. This recipe never fails! I do add an extra tablespoon of sugar and 1/2 tsp of vanilla. I also cut the butter to 1 Tbl.

Cream Cheese Frosting II

Only needed half so I halfed the cream cheese and butter but kept the vanilla and sugar the same. Frosted 8 cupcakes and a 7 1/2"x11" rectangular cake. Perfect!!

Best Carrot Cake Ever

After reading reviews I was torn on whether or not to drain the carrots as many reviewers recommended. I finely grated the carrots with my food processor's grating attachment. After sitting, they render a lot of liquid. I ended up squeezing them out by the handful (no cheesecloth) and added back 8-9 Tbsp of the carrot liquid to the cake batter. I increased the cinnamon to 5 tsp and also added 1/4 tsp each of allspice and nutmeg. Next time I wod do 1/2 tsp each. I left out raisins and walnuts (preference). I did 12 cupcakes baked for 23 min and a 7 1/2"x11" glass pan for 34 min. For frosting: 8 oz cream cheese, 1/4 cup (1/2 stick) undated butter, 2 cups conf. Sugar and 1 1/2 tsp vanilla. PERFECT!! Everyone said it was moist and fantastic! Will make again.
