Butterscotch Pudding I

Made this for my husband who is a butterscotch pudding lover. I've made it twice and the first time it came out grainy. This time I added everything to the pot before cooking but it was still a bit grainy. Perhaps I'm not cooking it long enough? Not quite sure, but my husband ate the whole batch so it couldn't have been that bad.

Cake Mixes from Scratch and Variations

Wonderful recipe for a basic cake. I will never buy a box of cake mix again in my life. A few changes I made based on other reviews: I used 1 1/3 cup milk and 1/3 cup fresh lemon juice for a yellow cake. I used canola oil instead of shortening and 3 egg whites. It was AMAZING. It makes a simple base for a birthday cake but the effort is what makes it delicious. I topped it with 7 minute frosting and shredded coconut. It's even better the second or third day if there are any leftovers.

Molasses Cookies

Excellent, quick and easy recipe. The only change I made was to use brown sugar instead of white and they were so delicious. A little crunchy around the edges and soft in the middle. Will definitely use this recipe when I need to whip something up quickly.

Neat Sloppy Joes

Excellent dish. I omitted the vinegar and used liquid smoke instead. Instead of the soup and ketchup I used some tomato paste. I also started the celery and onion in the pan and softened it, then added the ground beef. We like the crunchier browned bits. This was very simple and took about 20 minutes. Next time I will add more veggies to make it healthier...maybe carrots and green peppers. Big hit with the toddler.

Zucchini Yogurt Multigrain Muffins

So I just tried this and my 3 year old LOVES them. They are very moist and hearty. The only changes I made were to substitute regular oats and wheat germ for the oat flour and to lower the sugar to 1/4 cup. They are DELICIOUS. I only made 12 and put the rest of the batter in a mini loaf pan and cooked for an additional 20 minutes. Great recipe.

Sweet Dinner Rolls

Great recipe. I have used this twice for holidays meals with great success. The second time I froze them before the final rise so all I had to do was thaw and pop them in the oven the day of.

Rhubarb and Strawberry Pie

Absolutely delicious. I'd never made a fruit pie or even tasted one so I was unsure of how it would turn out. Since my husband requested it specifically for Father's Day, I had to try. It was perfect. I used a lattice top and let it sit in the oven with the heat off for 30 minutes after cooking. The consistency was just right.

Slow Cooker Spicy Black-Eyed Peas

These turned out absolutely fantastic. I made some modifications though by omitting the tomatoes and adding finely diced onion, celery and carrots. I first seasoned and browned some neck bones in a cast iron skillet and then the onion, carrot mixture. I used one cup of chicken stock and 4 cups of water and threw it all in the crock pot. Started it out on high for and hour and then reduced it to low for another 3-4 hours. It was SO good and was just like my grandmother from Mississippi used to make. Served it over rice and my Italian hubby and 2 year old loved it.

Soft Chocolate Chip Cookies II

I just made these with my 2 year old and they were absolutely AMAZING!! I changed a few things. I added 1/2 teaspoon salt and used all butter, no shortening. I also made it in a 9x13 pan. Perfect, not too sweet so soft and crispy on the edges. I will make this again as a birthday "cake" for my husband since we don't really like regular cake with frosting.

Grandma's Corn Bread Dressing

Perfect recipe to recreate my grandma's dressing. My husband, who has never had cornbread dressing before, loved it and so did my 2 year old. I added fennel and carrots diced finely as well and the flavor and texture was awesome.

Made this to use in the cornbread dressing for Christmas dinner. It turned out perfect. Moist, delicious, not too sweet. I took some of the recommendations and used less flour and a little less sugar.

Traditional Mashed Potatoes

I needed a basic recipe for my first Christmas dinner. This was fantastic. It's best not to mess with tradition. Husband loved it. I served it with homemade mushroom gravy and it was amazing.

World's Best Lasagna

My 2 year old and Italian husband thought this was fantastic. We ate every last bit of it. All I had on hand was ground beef and it was still awesome. I also didn't have any Parm on hand so I used Pecorino Romano instead and it added a really nice flavor.

German Apple Cake I

This is the first from scratch cake I have ever made and it was fantastic. I trying to learn how to bake and also do something fun with my 2 year old during the winter. This is a great recipe for beginners and I already had everything on hand. Tastes so delicious especially the next day. It's definitely a keeper.

Whole Wheat Honey Bread

This is the first bread recipe I have ever tried and it was so amazing. I don't have a bread machine but you really don't need one. My 2 year old son helps me and it's fun to do. I've made it about 5 times now and it gets better every time. I used butter instead of shortening and used about 1/4 cup honey instead of 1/3. I sprinkled some dry oats on top for a little something and it's just so easy, quick and delicious. Great for sandwiches and toast. I plan to never buy a loaf of bread again.
