Breakfast Casserole II

I love this breakfast casserole. I found this recipe two years ago when I was looking for something different (but easy) to make for my family Christmas morning... before presents. That Christmas Eve, I made it (exactly as the recipe indicated) the night before and heated it up Christmas morning. Everyone loved it. Instant family favorite. I did think it needed salt, though. And, for me, pepper. Shortly after, I began getting requests for this casserole on a regular basis. A few times, I used Sage sausage. Excellent flavor. A couple times, I did not have condensed milk, so I just used a little regular milk. Still tasted great. A few times, I have added garlic salt. One time, I used cream of mushroom, with roasted garlic. Hmmm.. and, another time, I used diced potatoes with green and red peppers.. Added some onions to the egg mixture. Nice flavors.. It seems you can use this base recipe and come up with multiple variations, based upon your likes and dislikes.... Next time, I'm thinking of using bacon, rather than sausage, and mixing the cheese throughout the mixture, with just a bit spread across the top.

Gumbo Style Chicken Creole

Oh my! I love creole style food and always thought of it as fatty, high calorie, indulgent food. This recipe, though, dispells that notion, completely. I can have all the flavor and (almost) none of the calories and fat. Yes!! Diet jitters be gone. I'm ready to lose weight and eat great! I made this exactly as written and my whole family, including their overnight guests, asked for seconds and told me I just had to make this again. My sister-in-law, who was not even there, heard about this meal and asked me for the recipe, based on word of mouth, alone. Yes, it was that good. Thank you so much for this recipe.

Grilled Cheese with Tomato, Peppers and Basil

I am NEVER, EVER eating a traditional grilled cheese again! These are wonderful. I love the flavor of the peppers and the basil... Mmmmm. Just a note to those who are afraid of the peppers... Don't even worry. I seeded the peppers thoroughly and chopped them, distributing them evenly on the bread, before placing the cheese on top of the bread so it melted in. There was no heat whatsoever. Just flavor. My daughter is so grateful for this find. She likes grilled cheese but was so tired of the same ol same ol. My husband asks for these all the time, as well. My son, who LOVES grilled cheese just the way they were also enjoys these. My two year old, on the other hand, prefers them the way he's used to them so I make his with just cheese! :)

Oregano Chicken

A great recipe. I had everything on hand. A little less soy sauce than necessary but it still tasted great. EVERYONE loved it. My husband, 19 year old son, his 20 year old girlfriend and my 4 year old son (who HATES everything, practically!! - His favorite phrase is, "But that's not my favorite.") I doubled the recipe and used 12 drumsticks. They were basically frozen so I defrosted for 30 minutes and stopped when it looked like they were actually cooking, rather. Cooked the partially frozen drunsticks for an hour, flipping half-way through. It was a win-win meal. Delicious for everyone and easy for me. I love those recipes.

Mini Cheesecakes I

I made these for last year's Thanksgiving dinner and they did not last long at all. Everyone LOVED. They were easy to make and DELICIOUS. I made them exactly as the recipe indicated. No need to change a thing. They were creamy and sweet. Did not stick to the paper liners. Plus, the bite size treats made sure everyone received a share, which is not always the case with a traditional cheesecake. I'm thinking about using this approch with pumpkin pie, as well. As the family "chef", I'm always expected to being something a little different and delicious. These little treats did not let me down.

Grandma's Green Bean Casserole

My sister-in-law is usually the one who brings the green bean casserole but I was a little bored with the standard cream of mushroom soup, fried onion variety so when I ran across this recipe, it sounded good and I just had to try it out for Thanksgiving dinner. It was so good, my sister-in-law didn't even care I took her dish over for the year! I loved it and it was a delicious change. I made it exactly as the recipe indicated and I would not change a thing.

Broccoli and Cauliflower Casserole

I normally just boil cauliflower and broccoli until their soft but semi-firm, and mashing the together, with shredded sharp cheddar and salt and pepper to taste. This year, I wanted to try a variation of the broccoli and cauliflower so I went straight to Allrecipes.com and found this one and Cauliflower and Broccoli Bake. I could not make up my mind so I made both - to the recipe. They were both so awesome I could not decide upon a favorite. It was creamy and flavorful and I will definitely make this a Thanksgiving traditon.

Cauliflower and Broccoli Bake

(Admissions: I increased the servings to 24 for Thanksgiving and either some of the ingredient amounts were wrong or I did not let the butter, flour and milk mixture thicken enough) I followed the recipe exactly (or so I thought) but when I pulled it out of the oven, the cream was not thick enough so I had to add more rice and cook longer to suck up the extra liqud. When I pulled it out the second time, it was perfect. My son was greateful it was not done in time for Thanksgiving so we could have it all for ourselves. I'm sure when I make it again, for the correct amount of servings, I will not have a problem, and, like I said, the flavor was phenomenal. So.... if You have a problem where it is too liquidy, just add rice and pop it back in the oven for 30 minutes or so.

Mexican Baked Fish

It frustrates me to no end that the people in my family are leery of "unusual" foods. Every time I make something they have never heard of or tasted before, it takes an act of GOD to get them to eat it without a preconceived notion of how much they are not going to like it. So, I stooped to trickery. I made each of them taste it but would NOT tell them what it was. I put it on a fork, said, "Taste this." They bit into it and LOVED it. When I told them the name, they were extremely surprised. This is a very tasty dish that even those with "normal" palates will enjoy. I made this exact to the recipe. Not sure if I will change the recipe up at all (I always end up doing that) but it was delicious AS IS.

Easy Curried Cauliflower

This was awesome. It was easy and healthy. Even my teens and my husband liked it. I made it as the recipe indicated (which I always do the first time I make any dish from allrecipes, so I can rate it fairly). I actually look forward to making this regularly (2-3 times a week) as a delicious and healthy snack... I'm sure it would be a wonderful "side dish", as well. :)

Zucchini Parmesan

I don't make this as a side dish.. I make this as a healthy snack. Since I love junk food and I love snacking, I am always trying to find more healthy ways to indulge my weaknesses. This recipe was such a Godsend. As long as you do not cook this too long, all the health values of the zucchini remain intact. The first time I made this, my husband, my daughter and her boyfriend demolished my treats. I had to go back to the grocery store for the ingredients to make more. It was worth it, though. :)

Vegan Curried Rice

I made the eggplant curry from allrecipes.com and I wanted to serve it with a rice dish that had like flavors. I did make this way different from the recipe, though, since I had already made plain, white rice to serve the eggplant curry over (before changing my mind). Since I like this recipe, I decided to just add the spices to the rice I had and just cook it a bit more in the microwave. I was still awesome. My husband asked for seconds on the rice and my daughter could not stop eating the rice from the pan, my plate, her dad's plate, etc. "Guess you shouldn't make food that tastes this good. Then, I wouldn't steal yours." :) The only thing I can say is that with my rendition, it was SLIGHTLY "grainy" (due to the powder spices, I am thinking). The flavors of the rice were wonderful, though. Spicy, yes, but wonderful nonetheless. I'll make this again but, next time, I'll try following the instructions to the tee.

Roasted Vegetables

These vegetables were wonderful. I LOVED the full and tangy flavor of the vinegar and the thyme and it was always a nice surprise to bite into the sweetness of a sweet potato amongst all the other strong vegetable flavors. The only thing I did wrong was to use dried whole thyme. I do not really like to keep fresh spices around because I never seem to use them in time so I use dried. The toughness of the dried "whole" thyme was a little annoying, even though it was a nice flavor so I already bought ground thyme for next time.

Easy Sausage Stuffing

This was a wonderful recipe. It was kind of like the Cranberry, Sausage and Apple Stuffing but without the cranberry or apples! :) I loved the Cranberry, Sausage and Apple Stuffing but others did not like the non-traditional sweet/tart additions. This one was much more popular with the masses. I was afraid it was not going to turn out okay (because it was soggy before it sat for a while) but I added some crumbled, toasted bread and it thickened right up.

Bow-Tie Pasta With Red Pepper Sauce

I am shocked at how wonderfully tasty and delicious this recipe was. I never would have thought to make a sauce out of bell peppers but this recipe was awesome. What a way to start out my low-call diet! I was afraid I was going to have to eat dull, dry, flavorless food but making this recipe right out of the gate made me more optimistic. I actually made this again but doubled the recipe to make it a main meal and my whole family really enjoyed it, including 2 teens and a toddler, as well as my mother, who was visiting.

Garlic Green Beans

I am shocked that I was so excited to eat these green beans. Guess it's cause I'm sually excited about a main dish or the dessert but the side dish? But I LOVED these green beans and can not wait to make these again. This time, I'm doubling the recipe or something so I can have left overs. I really loved the garlic and the parmesan cheese gave it a very distinct flavor. I made this exact to the recipe and will not change a thing next time, either.

Cabbage Roll Casserole

One thing I love is a healthy, tasty and EASY meal. This is all that. So, I love it. And so did everyone else in my family, including my daughter who supposedly "hates" cabbage and wasn' even going to "taste" it! After one bite.. she wanted more. Her byfriend, also a cabbage hater, raved abouth this meal. After three times of making this, the only note I have is: Don't use too much cabbage (unless you actually want it to be the dominant flavor). I used more cabbage the last time, since it is hard to guage the "pounds" chopped, but I used too much cabbage, and my hubby commented on the cabbagey-flavor. As the recipe is written, it is awesome. Delicious. The flavors are well and equally balanced. Next time, I won't change a thing.

Washabinaros Chili

My mom passed on a tomato-based chili recipe that I would have sworn was the` best chili ever.... until I tasted this recipe. Since my family and I disagree on the spiciness of the recipe, next time I will use less chilis, but the actual flavor... mmmmmmmmmm. I even forwarded this recipe to my girlfriend, who's husband is a chili "connousieur" and even he raved about this recipe.

Groovy Green Smoothie

For something so healthy, with spinach, even, this qas quite sweet and tasty. Ironically, I made this for my toddlers to replace their Nutrigran bars but, while they did nto care for it much, I loved it. I plan on drinking this for breakfast 2-3 times a week. My husband liked it, too, drinking his own glass. The only thing I would do is keep it blending longer, in order to not have the little chewy spinach pieces. I don't like to drink AND chew.

California Grilled Veggie Sandwich

I am DEFINITELY going to make this again... x a million. It was so delicious, my meat and potatoes hubby even rated it a 5 and compared it to food we eat at high end restaurants. To top that, my sixteen year old, fast food loving son, said it was awesome.
