Ashley's Chocolate Chip Cookies

Excellent cookie that's NOT flat like Toll House. I've been using this recipe for a while and finally decided to review it because it is very reliable. I adjust the servings to 48 which rounds the ingredients nicely and I still use just one large egg, with 1/4 c. white sugar. I always use 1 cup of semi-sweet chips with 1 cup of walnuts. They don't last long!

Fluffy Pancakes

I deleted all other pancake recipes. I've been looking for the best one and we all agree to stop right here! The texture is perfect; light without being dry. I did not have vinegar so used sour cream (1/2 c.) and filled with milk to make 3/4 c. Also added 1/2 t. vanilla and some blueberries. These pancakes are excellent!

White Peach Sangria

This was soooo delish! I used mango flavored vodka, added 1/2 cup cointreau (omit sugar), and added frozen strawberries & mango chunks. Serve with club soda - or beware! LOL

Pepper-Crusted Beef Tenderloin with Chocolate-Port Sauce

We all enjoyed this dish. I made the mistake of using a dark 60% chocolate that was not bittersweet. Then I had to "doctor" the sauce by adding more balsalmic and salt. In the end it was good but you could taste the chocolate too much. Also, I made this for 8 people so I quadrupled the sauce when 2X the sauce would have been plenty.

Roasted Garlic Mashed Potatoes

Very creamy and not too dry. But if you're going to roast the garlic for long enough to make the flavor mild, I suggest using more. For 3lbs potatoes I used 2 heads of garlic that I roasted for an hour. It was definitely not too much! Also added minced parsley and reduced the butter by half to remove some fat.

White Chocolate Raspberry Cheesecake

I agree with the others - this is really a top-rate cheesecake. The texture is divine; creamy yet not too soft and not too "cheesy". For the crust I used 2/3 package oreos, no sugar and 1/4c. melted butter drizzed into the food processor. This gave me a nice firm crust and enough crumbs to go a bit up the sides. Dickenson's seedless rasberry jam heated in the microwave made a perfect swirl and I drizzed more on top when I served it.

Easy Valentine Sandwich Cookies

These tasted fine and rolled out easily enough but did not hold their shape. I doubled the recipe (exactly) and believe 2 teasp soda/cr of tartar was too much! They were cake-like. If you are looking for clean cut-outs to decorate, choose something else.
