Vegetarian Tortilla Soup

I'm not one to change around recipes, but I thought this might be too bland if I made it as is. I diced up and added 2 jalapenos for more heat and also added a 10 oz can of red enchilada sauce. I agree with most of the other reviews and this had too much cumin in it. I think 1 1/2 tablespoons would have been plenty. I also left out one can of green chilis and that seemed perfect. Lastly, I put about half the soup in the blender to give it a thicker consistency. The flavor was great, but I'm not sure if it would have been as good without the changes. Very easy to make and this recipe can be tweaked to your personal taste.

Almost Eggless Egg Salad

I am not a vegan or vegetarian; however this recipe was great. I was looking to use of some leftover tofu I had and am so happy I came across this recipe. I personally don't think you can tell that there are no eggs in it. The flavors were wonderful and I even had everyone at work trying it. Give it a try!

Homemade Black Bean Veggie Burgers

I made these last night and think the recipe is a good base, but needs some additions. I added jalapeno, cilantro and a little tofu to my mixture. Even with the jalapeno, hot sauce and chili powder, the burger was still bland and not spicy. I think it needs some salt and pepper because I can only taste dry beans and cumin. I used a cilantro sauce on my bun instead of ketchup or mustard and that seemed to add some much needed flavor. One of the reviews suggested quinoa and I think that would be a great idea. Not a bad recipe, but you'll want to tweak it to your taste.

Chantal's New York Cheesecake

I will never use another cheesecake recipe again after finding this one. I have made this so many times now and always get so many compliments on it. After making it several times, I realized that I wanted a lemon flavor to it, so I typically add some lemon zest as well as the juice. After a day in the fridge, the lemon flavor is very noticable. I always use a water bath and have never had my cheesecake crack. I also use my food processor to mix this as it gives it a much creamier texture with no lumps at all.

Amy's Cilantro Cream Sauce

This is my favorite recipe from this site. I originally made it with the Southwest Eggrolls (also from this site) and it was a hit at a family party. I have used it on quesadillas and also just with chips; the combinations are endless. I did try something new today to see if I could cut down on calories/fat and still get the same results. I think I came close. I used non-fat plain yogurt instead of the cream cheese and let it sit and drain for about an hour in a strainer with a paper towel. Then I proceeded as normal with the recipe. It's not nearly as thick, but the flavor tastes almost identical. I think I will try this new variation on a taco salad as a dressing.

Cranberry-Pear Tossed Salad

I just took this to a BBQ for Labor Day and it was a hit! Even family members that don't like this type of salad loved it and went back for seconds. The dressing was so good yet so easy to make. I will definately be making this again.

Actually Delicious Turkey Burgers

Slow-Cooker Chicken Tortilla Soup

This recipe was so great and so easy to make. I took the advice of others and cooked the chicken with the rest of the soup, pull out once cooked and shredded. I also used a medium enchilada sauce, which was perfect and offered enough "heat" to the soup. This will be something I make over and over again!

Stuffed Peppers My Way

I was looking for a good stuffed pepper recipe to try and came across this one; and let me say I am so glad I did. This recipe is great! I have made this on so many occasions that I no longer even need the recipe. I try and keep most of the ingredients on hand so if I need to make a quick dinner I can. The only change I've made is to add some garlic in when cooking up the green onions and spices. All of my family and friends ask me to make this for them all the time. The presentation of this can be beautiful. I have served the peppers on top of garlic mashed potatoes and garnished with asparagus spears in a circle around the edge of the plate. This recipe is De-LISH!!!
