Vegetarian Tortilla Soup
I'm not one to change around recipes, but I thought this might be too bland if I made it as is. I diced up and added 2 jalapenos for more heat and also added a 10 oz can of red enchilada sauce. I agree with most of the other reviews and this had too much cumin in it. I think 1 1/2 tablespoons would have been plenty. I also left out one can of green chilis and that seemed perfect. Lastly, I put about half the soup in the blender to give it a thicker consistency. The flavor was great, but I'm not sure if it would have been as good without the changes. Very easy to make and this recipe can be tweaked to your personal taste.

Almost Eggless Egg Salad
I am not a vegan or vegetarian; however this recipe was great. I was looking to use of some leftover tofu I had and am so happy I came across this recipe. I personally don't think you can tell that there are no eggs in it. The flavors were wonderful and I even had everyone at work trying it. Give it a try!

Homemade Black Bean Veggie Burgers
I made these last night and think the recipe is a good base, but needs some additions. I added jalapeno, cilantro and a little tofu to my mixture. Even with the jalapeno, hot sauce and chili powder, the burger was still bland and not spicy. I think it needs some salt and pepper because I can only taste dry beans and cumin. I used a cilantro sauce on my bun instead of ketchup or mustard and that seemed to add some much needed flavor. One of the reviews suggested quinoa and I think that would be a great idea. Not a bad recipe, but you'll want to tweak it to your taste.
