Delicious Gluten-Free Pancakes

We've tried lots of different GFCF (Gluten and Casein Free) recipes for pancakes and they were... edible. Most were really flat like tortillas. Not this recipe! My kids had NO clue they were eating gluten free! (My daughter needs enzymes in order to consume wheat or milk products.) She thought they tasted like the real thing. I did change a few things.... instead of the canola oil, I used applesauce. Instead of the buttermilk powder and 2 cups of water, I used almond milk. It was a little runny (so, I'd probably add the almond milk until it was the perfect consistancy.) I also added some dried blueberries to the mix. :) Other than that, they were fluffy & thick and oh so good! The batch was big enough for me to freeze some. Every morning my kids wake up and ask for more yummy pancakes. Thanks a lot for posting this :)

Blueberry Cornmeal Muffins

These were really good! We substituted regular flour with Bob's Red Mills Gluten Free Baking Flour, and instead of butter, I used applesauce. (My daughter cannot have milk or wheat)...They were sooo good. Just sweet enough. We also added cherries with the blueberries. We froze the remaining muffins for future use :) Very good!

Gluten-Free Yellow Cake

YUM! This is light, fluffy, and would fool anyone into thinking this was a "real" cake. :) It whips up in no time, and tastes yummy... I followed the recipe to the T, except that I added 1/2 c of cocoa, and it is a really good choco cake... (I also nuked my almond milk and added it to the rice before mixing anything else into it so it wouldn't be gritty, like some of the others suggested. It makes about 16 cupcakes... i am putting the rest in a baggy in my freezer so I do not pig out.. I've already eaten two... they are realllllllly good! This will be a winner in my house. Thanks!

Old Plantation Rolls

I used whole wheat flour in place of 3 cups of the flour. I also added 1/2 c of flax... the rest, I used white flour. I also replaced the milk with almond milk, and the shortening with olive oil. They were thick, yummy & quite tasty. I served 8, and they were gone by the end of dinner... I make these once a week and only cook them 10 minutes.I freeze the 24, taking out 1 for each person and thaw, heating them at 350 for about 8 minutes before dinner. They go really well with soups, or split in half with jelly.

Light Wheat Rolls

I'd give this about a 3.5. Not bad, but not all that great. They are a little dense, even after I let them rise for over an hour... the taste is a little bland. Would be great if you put Italian Seasonings on it with some olive oil for a focaccia bread.

Pumpkin Pancakes

Incredicbly thick... so much so that even though I smashed them into the pan, the middles were not done.. the outsides got burnt... I turned down the heat, but the insides still did not get done. I had to microwave them to finish them off, which left me with a limp pancake... I am dissapointed in the recipe because of this. The texture in my mouth was not pleasing, as I had to keep drinking orange juice to wash it down... Now, the taste was excellent. My kids scarfed them down like there was no tomorrow... that is the only reason I didn't give this recipe a 1.

Gluten-Free Fudge Brownies

Eh, these *tasted* okay, but they were soo super dry! I am going to take them and chunk them up, bake them and use them as cookie crumb pie bottoms... I had to drink 2 huge glasses of water to wash these down. Pretty disappointed, since I am putting my kiddo back on the GF diet.
