Holiday Chicken Salad
I made this with Morningstar's Veggie Chicken Strips (because I am vegetarian, haha). It was AWESOME. I also added red onion, a little more seasoning salt, halved grapes, and used toasted unsalted almonds in place of the pecans (just didn't have them on hand).

Tofu Parmigiana
Very, very good. I used jarred spaghetti sauce instead of making the tomato sauce mixture. We made paninis out of them with italian bread and fresh basil- a great lunch!
