Too Much Chocolate Cake

I made this recipe with the exact same ingredients, but I made it into cupcakes instead. Phenomenal. Cook it for only 20 minutes if you make cupcakes. Also, be prepared to have a ton of cupcakes. It makes about 25.

Princess Cookies

Great cookie. Turned out perfect. I cut the recipe in half. I didn't have any lemons on hand so used a bottle of lemon juice. I upped the juice a little just to be sure i had enough lemon flavor. Even though I bumped up the lemon a bit the lemon flavor was very light - almost imperceptible. Still very good. Also,I would recommend rolling them in sugar. It gives a nice sparkle to them and makes them a bit crispy. I used vanilla sugar I had handy for the coating.

Fluffy French Toast

Hands down the best French toast recipe I've ever tried. I added my own little flair to it, but I've made the original recipe, too, and loved it. My alterations are as follows: I use French bread. I buy the $1 loaf at Walmart and cut it up into thick slices. It comes out to about 16 pieces. Next, I use vanilla sugar. Don't do this unless you're a fan of vanilla. You could cut back on the vanilla extract if necessary. I do not. I also use real maple syrup. It's so much better than the imitation stuff. It's expensive but worth it. Overall, this is an A++ recipe. It's easy to make; delicious; and a crowd pleaser. Try it.

Braised Balsamic Chicken

This is one of our favorites. I mix the herbs with the tomatoes and vinegar in a large bowl first. I like to let it sit in the refrigerator for a little while before I use it. Very good recipe!

I followed the instructions exactly, but I thought it had too much of a Mayo taste. So I upped the lemon quite a bit. That helped, but I wasn't blown away by it.

Salsa Chicken Rice Casserole

I omitted mushroom soup (wife hates mushrooms) and onion (none handy). I also cut the recipe in half and cooked it in an 8x11 casserole dish. Came out bubbling hot after 20 minutes at 400 degrees. Perfectly easy recipe. It requires a little more clean up than I like, but overall it's worth it.

Salmon Patties I

If I'm being honest, I gagged when I first opened a can of salmon. It looked terrible. I went ahead with the recipe anyway. It was pretty darn good. I used egg white instead of a whole egg. I also used cooking spray instead of olive oil. It turned out great. I like to pour Pace Picante sauce over mine. It compliments the recipe nicely.

Quick Yeast Rolls

This is a great recipe. It's very easy and delicious. FOLLOW THE DIRECTIONS! It looks really sticky at first and you may think it won't work out, but if you follow the directions it will come out fine. I like to use a little egg wash on it before I cook it so it won't come out white.

Spicy Oven Fried Chicken

I used this recipe more as a guide than anything. I didn't soak my chicken in the buttermilk, i didn't use the hot sauce, onion powder, sugar, garlic salt, salt, paprika, or cayenne pepper. Instead of all those spices I used 1 heaping tablespoon of Cajun seasoning. I know... I pretty much ended up with a totally different product, but it was delicious!!

Rich and Creamy Tomato Basil Soup

Great soup! I cut the tomatoes in half, drizzle with olive oil, sprinkle with garlic salt/Italian seasoning/minced onion and roast for about an hour at 200 degrees. Then I let them cool down some and peel them. Then I proceed with per the recipe. This gives it a strong tomato taste.
