Braised Balsamic Chicken

Reviewed: Apr. 7, 2012
This is one of our favorites. I mix the herbs with the tomatoes and vinegar in a large bowl first. I like to let it sit in the refrigerator for a little while before I use it. Very good recipe!

Caesar Salad Supreme

Reviewed: Apr. 7, 2012
I followed the instructions exactly, but I thought it had too much of a Mayo taste. So I upped the lemon quite a bit. That helped, but I wasn't blown away by it.

This was fantastic! Easy and delicious - the two most important things a recipe can possess in my opinion. Try it.

Salsa Chicken Rice Casserole

Reviewed: Jan. 16, 2012
I omitted mushroom soup (wife hates mushrooms) and onion (none handy). I also cut the recipe in half and cooked it in an 8x11 casserole dish. Came out bubbling hot after 20 minutes at 400 degrees. Perfectly easy recipe. It requires a little more clean up than I like, but overall it's worth it.

Salmon Patties I

Reviewed: Nov. 11, 2011
If I'm being honest, I gagged when I first opened a can of salmon. It looked terrible. I went ahead with the recipe anyway. It was pretty darn good. I used egg white instead of a whole egg. I also used cooking spray instead of olive oil. It turned out great. I like to pour Pace Picante sauce over mine. It compliments the recipe nicely.

Quick Yeast Rolls

Reviewed: Nov. 20, 2010
This is a great recipe. It's very easy and delicious. FOLLOW THE DIRECTIONS! It looks really sticky at first and you may think it won't work out, but if you follow the directions it will come out fine. I like to use a little egg wash on it before I cook it so it won't come out white.

Spicy Oven Fried Chicken

Reviewed: Feb. 20, 2010
I used this recipe more as a guide than anything. I didn't soak my chicken in the buttermilk, i didn't use the hot sauce, onion powder, sugar, garlic salt, salt, paprika, or cayenne pepper. Instead of all those spices I used 1 heaping tablespoon of Cajun seasoning. I know... I pretty much ended up with a totally different product, but it was delicious!!

Rich and Creamy Tomato Basil Soup

Reviewed: Feb. 8, 2010
Great soup! I cut the tomatoes in half, drizzle with olive oil, sprinkle with garlic salt/Italian seasoning/minced onion and roast for about an hour at 200 degrees. Then I let them cool down some and peel them. Then I proceed with per the recipe. This gives it a strong tomato taste.

Hummingbird Cake

Reviewed: Jan. 31, 2009
Very good. I will have to agree with some other reviews, though. This does taste an awful lot like banana nut bread with icing. However, it is wonderful. I used pecans instead of walnuts and added some to the icing. Overall a good recipe.

Pineapple Upside-Down Cake VII

Reviewed: Nov. 2, 2008
This came out perfect. I must admit, I was skeptical. I was afraid it would burn on the bottom before it cooked all the way through, but I was wrong. It worked out well.

This is a great recipe. I did make a few alterations. I reduced the sugar to 2 Tablespoons and raised the salt to 1/2 Tablespoon. Came out great.

Sugar Cookie Frosting

Wonderful recipe! I made one little alteration. I used 4 Tablespoons of milk and 1 Tablespoon of lemon juice. It gave the frosting a slight lemon finish. It was a hit at my Mason Lodge!

The Best Rolled Sugar Cookies

Reviewed: Sep. 1, 2008
These cookies are great. I would recommend, however, that you press the dough down with your hands till almost flat on wax paper, then place wax paper on top of dough for rolling. Even after being in the freezer for an hour it became really sticky really fast. Other than that this is a great tasting cookie. I used the "Sugar Cookie Frosting" as an icing.

This was good, but it's more like cake than bread. Should be called "Amish Friendship Cake".
