Banana Oatmeal Bread

5 Stars. A wonderful, tasty bread. Used 1/2 Cup applesauce and 1/2 Cup butter in place of shortening, used 3 bananas for a moist bread, no raisins. The crust came out really well! Lovely.

Angie's Perfect Dinner Rolls

Followed the directions exactly and got nice fluffy, beautiful dinner rolls! Everybody loved them and they made great little sandwich rolls the following day. Watch the quantity though, this recipe makes 36 rolls which is a lot of rolls for a small family! I cut the recipe in half and still got 20. Also if you are having a hard time getting the dough to rise while in the bowl, heat up your oven and then turn it off and leave the bowl of dough to rest on top of your oven door while the door is open, it helped my dough to rise. Will definitely make again!

Garlicky Baked Butternut Squash

Super tasty! I poked holes in the squash and nuked for 8 mins, turning over half way through. Then I used a potato peeler to peel the skin off. This made it a lot softer for removing the seeds and cubing the squash. I thought the oven temp. was too hot so cooked at 375 for about 1 hr 10 mins, stirring the squash regularly throughout the cooking time. I added the cheese AFTER I pulled it out and mixed in, as well as a TBSP. of butter and some more salt. It was really good!

Chile Rellenos

You must use "Big Jims" to get the proper flavor/spice/taste. That is the long skinny green chile. These were very rich! We only needed two a piece with a side of black beans and rice for a VERY filling meal. For the batter I used 4 eggs, separated. Whipped the whites and then blended the yolks separately with 1 TBSP of flour and some salt and then whip into the whites. Dip the chiles into some flour and then into the batter and place seam side down into the pan. Yum, yum but I still prefer the local hole in the wall chile rellenos and much less work when someone else makes them!

15-Minute Marinated Chicken

Wow, this is really tasty with Natalie's addition of the turkey bacon. I prep everything in the morning right in a glass baking dish, cover with plastic and pop in the oven in the evening. Don't leave out any of the ingredients, we tried leaving out the lemon once and it didn't taste the same. VERY good!

Spinach and Feta Pita Bake

I used 5 pieces of whole wheat flat bread instead of pita bread. The bake time was just a little less. I thought they were a bit rich but still great! Use less of the sun-dried tomato pesto and a little less feta if you don't want them so rich. Great lunch with a side of fruit or as just a appetizer!

Mimi's Zucchini Pie

This recipe is a summer favorite! Great to bring to those summer parties and use up the rest of those zucchini's in your garden or your neighbors! I used 3 eggs, 1/2 cup Parmesan on the inside, plus an additional layer on top, I add nutmeg, pepper, hickory bacon salt, and some garlic to taste, top with roma tomatoes and fresh basil leaves for a pretty pie! I recommend adding the top layer of cheese & tomatoes during the last 10-15 minutes of baking. Putting the tomatoes ON TOP of the cheese makes for a prettier presentation in my opinion. If you use fresh basil leaves sneak them under the tomatoes when you pull out the pie because they'll burn in the oven.

Crustless Spinach Quiche

I added chopped ham, used sharp cheddar, and used only egg whites. Bake time was about 10 minutes longer than original recipe. This was SUPER tasty, eat for breakfast OR dinner. Left overs reheat well too!

Beth's Spicy Oatmeal Raisin Cookies

These are SUPER tasty. I completely omitted the white sugar and only used the 1 cup of brown and they were still VERY sweet. I also used only whole wheat flour in place of the white flour. This is a much healthier alternative and the raisins still make them sweet and tasty! I bake at 350 for only 8 minutes and they were PERFECT! This recipe makes a TON of cookies so you might want to cut the recipe in half if you have a small family.

Oatmeal Blueberry Muffins

I LOVE these muffins. Please note that they are a healthier muffin and don't taste anything like the out-of-the-box muffins. If you like sugary-dessert style muffins these are not for you. I love the texture and also used whole wheat flour but kept the rest of the ingredients the same. Make sure to get BIG blueberries for the best flavor. Add a 1/4-1/2 cup of sugar to make them sweeter but I liked them just how they were listed!

Warm Goat Cheese Sandwiches

I used whole wheat pitas and only used 3 oz. of goat cheese for 3 full pitas. 5 ozs of goat cheese was a little too much in my opinion. I also brushed the tops with some olive oil to make them a bit crispy. Added ham to hubby's and he preferred those. They were super tasty but next time I will add some more veggies, maybe some peppers. We had salads on the side for a good meal.

Baked Bar-be-Que Chicken

I found this to be bland for BBQ chicken. I've tried making this with the skin and without the skin, and even taking the skin off partway through and still found it to be bland. I really think that the chicken needs be marinated for a couple of hours BEFORE cooking. I think the cooking time can also be cut down by 15 minutes. This recipe still has good flavor if you don't have the time to marinate but if you do I highly recommend it first.

Chicken and Cashews

Excellent! I marinated the chicken overnight in 1/2 cup of "House of Tsang Korean Teriyaki Sauce." I also added 1 cup of fresh broccoli florets for some color! Super tasty over white rice and VERY easy to make!

The Best Veggie Sandwich

These were simply wonderful! I used a fresh white round loaf, cut thin and added some mesquite smoked turkey. Side of romaine lettuce with some plum tomatoes for an excellent and filling meal!

Cheese-Stuffed Jalapenos

Brought these to a party ready to bake and everyone loved them! Only boiled them down for 4 minutes and they had a spicy kick to them but were not too hot. I'e also made them with large jalapenos and didnt have to boil at all. Use some SMOKED cheddar for really tasty filling.

We thought this was OK. We used reviewer, Julene's additions to the recipe but still felt that it lacked some flavor. Next time I will add more cheese and more spices! Good and healthy meal nonetheless!

Kung Pao Chicken

An excellent recipe. The marinade didn't make quite enough in my opinion and I added a bit more white wine and soy sauce. Watch the amount of chile paste you put in, I thought it was pretty hot! But hubby loved it! An easy-to-make recipe and great with white rice.

Pumpkin-Apple Muffins with Streusel Topping

Forget the streusel, these are so divine that you don't even need it! I made these tasty muffins with whole wheat flour only, cut the sugar in half, added 1 cup of milk, 1 cup of quick-oats, and a couple tablespoons of flax seed and they were still super yummy, sweet, and had a to-die-for aroma! 5 STARS! P.S... my additions made 12 overfilled muffins and the cook time was 20 minutes exactly.

To Die For Blueberry Muffins

I gave the crumb topping a chance but only tried in on two of the muffins. It also sank a hole in the middle and dripped off the pan. The other ones I added 1 cup quick-oats, added a half cup of whole wheat flour, a 1/2 cup of milk, some cinnamon and some vanilla with FRESH blueberries and they turned out awesome. This is an easy recipe to alter to your liking. Just make sure to taste it as you add the sugar in so it comes out to your liking. Adding some quick oats, wheat flour, and cinnamon gave it some nice texture and flavor without the sweet topping and you can still overfill them so you have BIG muffin tops.
