Tasty Lentil Tacos

Reviewed: Dec. 26, 2009
I have made this many times now and love it. I do eat some meat but prefer vegetarian if I can, and these tacos made me forget about the meat version. I made these in the slow cooker on the low, 8 hr setting. I just dumped all of the ingredients into the crock pot and let it go! I have used several different types of salsa and every batch has turned out great. This time I added chopped zuchinni (you can mash it up at the end if necessary to make it unnoticable to others, kids or husband) to make it more veggie dense. I also typically add a taco seasoning packet (low sodium) but it is good exactly as written in the recipe. I prefer this on crispy taco shells with lettuce, cheese, and greek yogurt, and taco sauce, but I often switch it up and have it on soft tacos or taco salad. Always good.

Cinnamon Apple Syrup

Reviewed: Aug. 16, 2009
I have made this twice now - once exactly followed the recipe, which was fantastic, and second time I halved it and added nutmeg and walnuts. Also, I chopped the apples into smaller pieces to make it easier to pour over ice cream...so good!

Peanut Butter Noodles

This was so much better than I was expecting. I cooked ground chicken first and then added the ingredients into the chicken. I doubled the sauce due to using the chicken. It was fantastic!

Ham and Cheese Quiche

Reviewed: Apr. 20, 2008
I have been using this recipe as a great base for quiche for years now and it comes out great every time. I use fat free half and half to make it healthier. I also often make versions with just broccoli or sometimes spinach and onion. Great with every variation. I also use a frozen deep dish pie crust and just put it straight in the oven filled.

Muesli

Reviewed: Jan. 13, 2008
I was not expecting this to be good as it looked so simple...I figured it would be bland. It is anything but, I added extra dried blueberries and pecans and it was amazing with just some milk. It was so good I had to have seconds. If you want to shake it up, you can add apple or pumpkin spice!

Very quick weeknight meal. This was much better than I was expecting and I just tossed in veggies that I had on hand (red and green pepper and onions). Great recipe!
