Ricotta Cake

Reviewed: Oct. 12, 2007
I've been making Ricotta Cake for quite awhile now, it's one of my husband's favorites. Recently I miss placed my recipe for it, and while trying to replace it came upon this version, and as far as i can tell it's identical to my previous one. However since it had been awhile since i last made this i wasnt thinking, and of course didnt properly read the recipe so i made the mistake of mixing all the ingredients at the same time... i was worried but decided to try it... it didnt turn out too bad and i would recommend this method for anyone who wants to avoid the "wet cake" texture. My mistake turned out a cake that was slightly more of a sponge consistency, but still retained the ricotta flavor, I perferr the traditional method but this "oops" was also good... and saved quite a few steps, all ingredients mixed in one bowl and then into the baking dish... alot less clean up too!

Coffee Icing

Reviewed: May 31, 2008
Wow! really great icing recipe! I added some cocoa powder in it to give it a deeper tone, made it as directed and it came out a bit thin, but that was perfect for what i was using it for... drizzled over chocolate filled crossionts, it makes a pretty presentation and looks like you did alot of work. Thanks for this, it's really yummy!

Cheddar Bay Biscuits

Reviewed: Apr. 13, 2008
Fantastic recipe. I took these to a BBQ and they were gone in minutes! Only change I made to the orginal, was to up the amount of cheese to 1 Cup ( as another reveiwer suggested) and subbed milk in place of the water, also added a few additional splashes of the milk, as i wasn't happy with the consistency of the dough, with the original amount of liquid. Though even with the changes i made, i'm sure this recipe is great as written! Try it, it's easy and good!

Fried Cabbage II

Reviewed: Apr. 10, 2008
Really good cabbage recipe!! I misread the directions, well, more like didn't read the directions and after cooking the bacon, used a tab of butter to deglaze the pan and then continued to follow the recipe as written. Turned really yummy.

Grenadian Spice Cake

Reviewed: Apr. 8, 2008
This a GREAT recipe!Perfect for "cake" people and non "cake" people ( being one myself!) I made a few changes based on some other reveiws. Used evaporated milk in place of the reg. ( adds creaminess and moisture)and since i had no limes in the house had to use some bottled lime juice in place of the zest. Also upped the spices, by adding the amount written on the recipe and then adding an extra half of those amounts. I was going to make an icing or glaze to go with this, but once i tasted it with some powered sugar on top, it was all over... it was too good as is to mess with any further!! I LOVE this recipe!! Perfect!

Naan

Reviewed: Mar. 8, 2008
This is SO good, and even though it's "indian flatbread" it goes great with a variety of meals!! Also despite the recipe calling for it to be cooked on a grill ( which is traditional, and i think adds to the flavor) it can so easily be made on a grill pan or i like to use and egg pan; makes the perfect size and shape! Sugesstion: alot of other reveiwers said that the recipe called for too much flour, first time i made this i cut it down to 3 cups, that was not enough flour, the dough came out really wet, 3 and half cup seems to work perfect!

Irish Champ

Reviewed: Mar. 6, 2008
This is a classic irish champ recipe. Half my family is irish and it tasted just like any champ i've ever had. I think it's important for people to remember when they make these recipes, that classic irish fare usually consists of basic, and usually very inexpensive ingredients. It's not supposed to come out tasting like something you ordered at a 5 star resturant... it's pub food!

Robert's Rosemary Rub

Reviewed: Oct. 4, 2007
Yummy! We had this tonight on Rib-eyes as suggested and it worked out perfect. The rub was just enough to add a little flavor without taking away from the steak. We'll definetly be using this again!

Double Tomato Bruschetta

Reviewed: Oct. 1, 2007
I know it's a little untraditional but all I had on hand was some whole wheat bread so in place of the baguette I used that. Followed the rest of the recipe as written and it turned out great. Loved this bruschetta!

Missy's Candied Walnut Gorgonzola Salad

Reviewed: Oct. 1, 2007
Awsome salad, the candied walnuts were great and even though I had to sub feta for the gorgonzola and also red wine vingear for the raspberry vinagrette it still turned out perfect. I've got to say I am totally in love with this salad.

Hungarian Mushroom Soup

Reviewed: Feb. 29, 2008
SO GOOD!!! I had to change it up a bit due to what i had in the house. I didn't have any sour cream so i followed all the other directions and subsituted a little evaporated milk and a drop of sherry for the sour cream, it turned out great. This soup really does give the warmth and heartiness of eastern european cooking...delish! I can't wait to make this again, i'm thinking subbing creme fraiche for the sour cream will give it an even more authentic euro flavor.

Espresso Bark

Awsome!!! The white chocolate bar I bought was pretty hard to crush though so I also melted that down in the microwave and drizzled it ontop rather than pressing it in chunks, just as good!! Thank you for this great and easy recipe!!!

Tzatziki Sauce I

Reviewed: Aug. 31, 2007
This was INCREDIBLE!! The only complaint i had with this recipe was the lack of cucumber beacuase traditional tzatziki sauce contains cucumbers, however if your not a cucumber person this is amazing even without it. I made this to go along with another Greek recipe from this site, and OMG i will be making it again! An additional note, the best part of this recipe for tzatziki, no draining the yougurt, YAY!

Souvlaki

Reviewed: Aug. 31, 2007
This was a great marindae, though like some other reveiwers suggested, go light on the soy sauce. I'm not a big pork or lamb eater so i went with what i had in the firdge and used a VERY VERY cheap, not so lean steak. I cut the steak into EXTREMLEY thin sliced and then dropped them into the marinade to soak for a day. When i was ready to cook i just took the meat, and the marinade dumped it into a frying pan with some mushrooms, and then packed it all into a pita with some lettuce, tomato, onion, feta, and the tzahiki I recipe from this site. It was great! Thanks for such an awsome marinade!!

The flavor in this was great! This was my first experience with hominy, and the texture of it kinda threw me off, but that's a personal taster thing, and this recipe motivates me to give hominy a few more tries to see if it grows on me!

Delicious Ham and Potato Soup

Reviewed: Sep. 20, 2007
This was great, though I made a few changes, some out cause i wanted to others cause I had to! I had no ham in the house so I subsituted bacon. I put the bacon, chicken broth ( not a fan of boullion) celery, onion, potatoes and chives into the crockpot added a minced clove of garlic and some herbs de provence and let it cook all day. When it came time to add the roux I made it with half of the milk and add some creme fraiche. All in all it turned out perfect. The best part about this recipe is it's so easy to play with, i'm sure you could add anything and it would turn out awsome!!!

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Sep. 9, 2007
This was amazing, and surprisingly amazingly easy. I was a little intimidated by the instructions but decided to try anyways and I am so glad I did. The only changes i made was as another reveiwer sugested instead of using a towel to roll the "cake" i used two peices of partchment paper one on the inside and one on the outside. Yummy!!!
