Mexican Quinoa

I made this tonight for the first time, as a side dish for burritos, and it was great! I left out the optional jalapeno and didn't top it with fresh cilantro, but we didn't miss them. It's a tasty alternative to Mexican Rice. Tonight I used Original Rotel and it was a little spicy for me and my husband, so next time I'll probably use the Mild Rotel. I'll definitely be making this again! Thanks!

Easy Enchilada Casserole

I've made this several times now. The first two or three times, I made it following the recipe. It was okay, but it was too runny. Also, for our tastes, it had way too much salsa and not enough chicken, and we prefer fresh salsa to jarred anyway. Now I substitute a can of enchilada sauce for all of the salsa, and mix that with the chiles instead. As for the chicken, I boil 5 or 6 boneless, skinless breasts and shred them when they're cooked, and then mix that with the soup, sour cream, and green onions. I follow the recipe for the rest of the instructions, and we top it with extra sour cream and my freshly made salsa.

Hot Dog Relish

I haven't yet made this exact recipe, but it is nearly identical to the one my grandma made for many, many years. I have her recipe and the only differences are that she used both red and green peppers (6 red and 10 green), a bit more celery seed, and cider vinegar instead of white. This is my favorite relish! It's not a dill relish, nor a traditional sweet relish. It has a taste all its own, and nothing I find in the stores tastes as good as this does, to me.
