My Mom's Parmesan Chicken

This was quite yummy! I liked the flavor the wine added, but it did cause the breading to get a little soggy. I served it with Candied Carrots and a Romaine salad. I will be making this again. Thanks!

Classic Waffles

These were good. They didn't crisp up as much as I was hoping though. They also soaked up maple syrup like crazy. The batter was enough for 4 restaraunt size Belgian waffles.

Crispy Orange Beef

Sesame Green Beans

These were pretty good. I did add a couple of teaspoons of garlic as other recommended. The sesame seeds gave them a nice "nutty" flavor. I think without the garlic they would have been pretty bland though. I did cook them for a shorter amount of time than called for, since I don't like my beans mushy. They also reheated pretty well, which suprised me!

New Potatoes with Caper Sauce

I guess this is going to be a 4 1/2 star for us. My husband gave it a 4 and I thought it was a 5. I didn't have any white wine vinegar, so I ended up using balsamic, otherwise followed the recipe. This was very good, and we will make it again. Thanks for the recipe Michelle!

Broccoli Beef I

We like this a lot. I used some rib-eye steak, beef base instead of broth, and after reading some other reviews I doubled the garlic and almost tripled the fresh ginger. I also added some slices of onion with the broccoli. Served over medium grain white rice.

Peanut Butter Bars II

Both my husband and I thought these were very good. I thought that the chocolate chip topping could be reduced or even left off, but he liked it just as written. Since I didn't have a full bag of peanut butter cups (Easter candy left-overs) I made just a half batch in an 8x8" pan, and ended up baking a good 10 minutes longer than called for since they were still jiggly at 25 minutes. Zucchini and Corn Topped with Cheese

I'd say 3 1/2 stars as is. I thought this was a little bland and that there was too much cheese. If I was to make this again, I think I would use fresh garlic, instead of powder and cut back the cheese by at least half. It is a very pretty dish though!

We like this very much. My 14 month old loved it! I made the recipe as stated, except for subbing ground venison for the beef/sausage. This is going into our supper rotation. Thanks for the recipe!

Sweet Corn Cake

We were looking to recreate the spoon bread from Don Pablos, but this just wasn't quite it. I followed the recipe as stated, but it wasn't as sticky as I thought it would be. It was good, but I'm going to keep looking.

Charley's Slow Cooker Mexican Style Meat

This was very good. I reduced the heat in it since we aren't into really spicy food. I cut the hot sauce in half and left out the peppers. It was still a bit hot, so next time I think I'll cut back on the cayenne pepper too. I cooked it on high for 6 hours, then pulled the meat, added cumin and paprika as another reviewer recommended and then cooked it on low for another 3 hours. We served it in soft shell tacos with Mexican Rice II and Sweet Corn Cake!

Mushroom Risotto

This wasn't that great. The Parmesan cheese was overwhelming. That was all we could taste, and it was just too much. The only change I made was to use chicken stock instead of vegetable stock, otherwise I followed the recipe. It took around 1 hour to incorporate all of the stock into the risotto. This was a big disappointment for the time-commitment I put into this dish. Also, it makes a lot. You could easily serve 6-8 people with this dish. If you are going to give this a try, I highly recommend reducing the Parmesan cheese.

Spinach Cheddar Muffins

These were okay. They were kind of bland. Not bad, but not great. I think maybe some garlic would perk them up? Also, the cheese caused them to stick to my muffin tin a bit. I had to use a knife and run around the edges to get the muffins to come out. I'm going to dry out the leftover muffins and use them in a dressing recipe I have that normally calls for cornbread and baking powder biscuits. N * R

Croutons

Who knew croutons would be so darn easy. We had some leftover three-cheese bread from Panera that was going stale. I cut it up, tossed in a ziploc bag as another reviewer recommended, poured the butter in and tossed. Put on a couple cookie sheets and baked it up! I did turn the croutons half-way through baking, and the cheese bread took much longer than the 15 minutes. We've already ate half of the batch just snacking!

Fresh Ginger Cookies

Excellent cookie! I had some fresh ginger left over from an asian dish I was making and decided to go looking for a cookie recipe. Very glad I found this one! I made the cookies slightly larger - I used a 2 tbsp. measuring spoon - and ended up with 2 dozen. Baked just a bit longer too, about 18 minutes. They are best after they have cooled, since the flavors don't come out as well when they are fresh out of the oven. I also used the tip of freezing my ginger before grating on my mircoplaner. Worked great!

Refreshing Cucumber Salad
