Blonde Brownies I

OMG these were just wonderful! I followed other suggestions and cut the vanilla in half and omitted the baking soda. I doubled the recipe for a 13x9 pan and baked 25-30 min. Absolutely delicious! PS - I also omitted the chocolate chips - true Blondies do not have any chocolate in them, hence the name. :o)

Bread Pudding II

I used Sara Lee 100% multi-grain bread that was getting a little dried out, 7 slices is what I had left so I used it all. Used 1/2 white & 1/2 brown sugar, replaced 1/2 cup of the milk with pumpkin spice liquid coffee creamer. OMG it was fabulous! Served with Cool Whip, we gobbled it down warm last night, but it was equally good cold out of the frig at lunchtime today. It's a keeper!

Thin Mint Cookies

You will get much better results using Crisco instead of butter in the chocolate coating mixture. And 1/4 c. is way too much for only 3 oz of chocolate, that's why the coating won't harden at room temp. Normally one would use 2 T. Crisco to a 12 oz bag of semisweet chocolate chips for melting purposes...

Mom's Best Peanut Brittle

I have tried many, many brittle recipes over the years, having a brittle addict for a husband. He has declared this one the best yet. I made it for Christmas using a few suggestions from readers, such as using half white and half brown sugar, adding the raw peanuts at 200 degrees to avoid scorching, adding a teaspoon of vanilla with the butter and bsoda. Warmed the cookie sheet to help the brittle spead out. The family just raved!

Broccoli Rice Casserole

Absolutely no need for the canned soup, makes it way too saucy plus dilutes the cheese flavor. Leave out the soup and the recipe is delicious. Made it today for Christmas dinner, the family loved it, minus the soup. PS, 2 T butter is more tha enough to saute the onion. Half a cup of butter is overkill. 4 stars due to the changes I had to make.

Good cookies! @bugparks, how did you burn yourself putting on a pretzel? I believe the directions say to put the decorations on before you bake the cookies, not after.

Crustless Cranberry Pie

I agree this isn't exactly a pie, but omigosh is it ever good. My hubby doesn't care for cranberries but he loved this dessert. I just sprinkled coarse sugar on top, for a pretty presentation.

Ribboned Fudge Cake

OMG we all loved this cake! I live in a high-altitude area so I added a couple Tbs powdered cocoa in lieu of flour to the batter, and used leftover coffee from breakfast in place of water. The ribbon came out just like the pic, it was sooo impressive! Topped with a simple chocolate glaze. By all means, serve with a big glass of cold milk. My husband said this was quite possibly the best cake I have ever made, and I've been baking since I was a child. (PS - I not only used a non-stick Bundt pan, but also then sprayed it with Baker's Joy.)

Fresh Rhubarb Pie

OMG this was fabulous! My Pampered Chef pie plate takes 6 cups of fruit, so I used the 4 c. rhubarb called for (diced small) plus 2 c. sliced strawberries that I had to use up. Mixed the sugar and 4 T. flour with the fruit, totally forgot the butter, and it came out fantastic. My husband said I outdid myself. WooHoo! Thank you Carol.

Creamy Rice Pudding

Wish there was a 6th star! Just wonderful, next time I'll double the recipe. Hubby complained, "That's all you made???" I used medium grain rice as another reviewer suggested. Made all in one pan, no need to dirty a second one. Stirred in a little cinnamon too. Couldn't stop eating it while still hot!

French Baguettes

Just wanted to update my review from last week - I tried it this time with bread flour, and what a difference! I gave it 5 stars last week using A/P flour, but with bread flour, I'm giving it 6. The texture was much more chewy, like a baguette should be. I did have to add about 20 minutes to the first rise. I didn't think it could get any better, but I was wrong! :o)

Pumpkin Cake III

Made this last night for work today, just as the recipe states, except used 1 tsp. cinnamon and 1 1/2 tsp. pumpkin pie spice. Used my own cream cheese frosting recipe. Getting rave reviews so far! Moist and delicious. My 12x18 pan was done in 20 minutes.

Donut Muffins

Absolutely wonderful! My husband loved the crunchy outsides and tender middles. Made exactly as written and got 24. Just can't see the need to coat in butter before rolling in sugar/cinnamon, however. Adds unnecessary calories and they are fabulous without the butter...

Pull-Apart Hot Cross Buns

Sandra, plz understand that hot cross buns and cinnamon buns are 2 entirely different things. These HCB are just fabulous! My first attempt at hot cross buns, tho I've been making bread for years. Don't own a bread machine, used my Kitchenaid to mix. Had to add 1/2 cup more flour as suggested by others, wanted to use currants, but impossible to find this time of year in the SW, so used all golden raisins. Absolutely yummy! Light and fluffy, wonderful flavor, took me back to my childhood in upstate NY, where everybody has hot cross buns for Easter. BTW, got 18 good-size rolls out of it, enough to share with the neighbors.

Cake Doughnuts

I believe I read all 122 reviews before trying this recipe. I decided to just cut back the milk by 1/4 cup, due to several warnings about dough being too sticky. They came out FABULOUS! Made as directed except for decreasing the milk, refrigerated overnight, used plenty of flour to pat out the dough with my hands (rolling pin totally unnecessary), cut and fried as directed. OMG heavenly! My husband flipped over these! No problem with stickiness at all. We had eaten half a dozen before I could get cinnamon sugar on them. Stored in Tupperware, they were still plenty good the next day. Thank you for the wonderful recipe!

Crazy Cake

The brown sugar adds a richer flavor, and everyone knows how a little coffee improves the flavor of chocolate, if that's possible. Just fabulous!
