Sweet Corn Cake

This recipe has become a staple at our house anytime we have Mexican. I leave out the water and use a can of creamed corn, instead of frozen, and skip the food processor part. I just dump it all into a bowl and stir it up. Turns out fabulous every time!

Pico de Gallo

Excellent!! The only change I made was leaving out the cilantro because I don't like it. My entire family loved this pico, from my husband all the way down to my eight-year-old. I'll be making this again and again.

Baked Chicken Nuggets

Yum!! The entire family loved this one! I served it with Ranch dressing for dipping. The only part I didn't like was how long it took me to get the nuggets breaded, but I'll solve that next time by making several batches at once and freezing for a quick meal later. Thanks for the great recipe!

White Chocolate Macadamia Nut Cookies III

This was a delicious cookie! The only thing I will change next time I make them is, the almond extract was too strong for me, so I will leave it out. The white chocolate and macadamia nuts make this a somewhat expensive cookie to make, but YUMMY!

Baked Spinach

I was the only one in my family who even thought this one had potential. It had a pretty good flavor when I added salt, but overall it was bland. I would probably try it again when I have dinner with my sister, who is a vegetarian, but I would try adding some things to perk it up a little. . . crumbled bacon would probably be good.

Chocolate Turtle Cheesecake

Yum! I took this one to a family dinner and it got rave reviews. I used a ready-made chocolate crust and only had about 4 hrs to refrigerate, but it was delicious!

Homesteader Cornbread

Honey Mustard Blend

I followed this recipe loosely, as I thought the amounts called for would make too much for my crew, but it was a big success. My husband really liked it. It was a great dipping sauce for sauteed smoked sausage!

Peanut Butter Cookies II

Delicious recipe. I left out the coconut and underbaked for a softer cookie. Cooked one batch for the full time and it was crunchy and not as flavorful, but the ones I underbaked were great. The only improvement I will make next time will be to use chunky peanut butter.

This is a tasty recipe, but very difficult to roll into logs. I tried it twice and it wasn't much easier the second time. This is a recipe I would make occasionally for our family, but not in large quantities for goody baskets or family gatherings.

Buttermilk Biscuits I

The biscuits had a great flavor, but mine didn't rise very well. I don't know if I did something wrong, but I will try again because, although they weren't too "pretty" the taste was good.
